Introduction

Ingredients

    2 cans chicken broth (low sodium)
    1/3 cup onion, chopped
    2 stalks celery, chopped
    1/2 cup carrots, sliced
    1 clove garlic, crushed
    1 ring turkey sausage, sliced
    1/4 tsp red pepper flakes
    2 cups instant brown rice
    1 can black eyed peas w/bacon - drained & rinsed

Directions

In a dutch oven, combine first 7 ingredients.
Bring to a boil, reduce heat and simmer with cover on for 45 - 60 minutes (to blend flavors).
Add black eyed peas and rice 15-20 minutes before serving.

    mmmmmm..enjoyed it very much-I did add a bit more garlic, some cajun seasoning, bell pepper and jalapeno and even though I'm a newbie and have not gotten a taste for brown rice as yet- I am looking forward to taking this in my lunch tomorrow and will certainy make it again! - 3/29/12
