Introduction

A hearty meal casserole that satisfies! Trade ground turkey for beef in this recipe to cut a few calories and grams of fat, but I love the real deal. A hearty meal casserole that satisfies! Trade ground turkey for beef in this recipe to cut a few calories and grams of fat, but I love the real deal.
Number of Servings: 8

Ingredients

    1 lb extra lean ground beef
    1 pkg chili seasoning
    1 cup instant polenta
    2 medium tomatoes, sliced
    1 cup shredded cheese
    cilantro to top

Directions

Brown beef and add seasoning - stir to combine.

Cook polenta according to directions - 3 cups boiling water to 1 cup polenta. When done, add beef mixture to polenta and stir.

Press polenta & beef mix into a greased 9x13 baking pan. Top with sliced tomatoes, cheese & cilantro.

Bake at 350 degrees for 20 minutes or until cheese is melted and browned and casserole is heated through.

Serve with a side of my Guacamole for a truly awesome dish!

    "Polenta" is pretty much corn meal mush -- you can cook 1 cup of yellow corn meal (or masa harina) in 3 cups boiling water for the same thing. Stir occasionally while the water simmers. (This is also known as Romanian "mamaliga", served as a side dish in place of potatoes.) - 1/7/12

    This recipe is AWESOME! I did tweak it a little bit--I used a can of diced tomatoes with chilis as opposed to the fresh tomato and used fat free cheddar. Made this way, the recipe has under 200 calories per (big!) serving and more protein than carbs. - 3/20/12

    I used this recipe as inspiration. I used a 1/2 lb of ground turkey and added a can of diced tomatoes and kidney beans. Then I made the polenta, added part of it to the chili, but the rest I spread out in my baking dish, then layered the chili and cheese on top. So good, thanks!! - 2/8/12

    I loved this. I didn't have any chili seasoning, but I did have taco seasoning on hand, so I made the beef with that. I then baked with cheese on top only. I served with salsa, quacamole and plain greek yogurt. Fantastic! - 1/15/12

    why not personalize your flavors with mexican chili powder,adobo,cumin,small dash achiote powder,and like that, i feel the packets of pre-fab seasonings are to much money for the amount you get...i pay a little more up front for large containers of spices,and blend my own,it's better,less salt. - 11/13/12

    This was really good, fast & easy. I used ground turkey instead of beef. Added onions, peppers, spinach & mushrooms to bulk it up. I didn't use the tomatoe, but next time I think I will add some salsa, or canned tomatoes to it for something different. This is going to be a weekly dish for me!!! - 7/13/12

    Made my own Polenta w/corn meal. Used ground Turkey and followed the recipe exactly. Mine looked NOTHING like the picture! I thought the tomatoes were unnecessary, but did get in some veggies. It was OK, but I don't think I'll be making it again. Made Guac as a side. Took a pic but how do I post it? - 1/24/12

    GREAT inexpensive casserole!! For those that don't know, Polenta is northern for GRITS (for the most part at least). So I made this with Grits and was surprised by how good it was. I My 9 year old even loved it. This is going to the next pot-luck at work (because I am cheap like that). - 10/22/13

    Used Rotel instead of tomatoes, a variety of seasonings instead of chili seasoning, ground turkey instead of ground beef. Next time will add some shredded zucchini to get some extra veggies in there. And maybe add an egg or two to add some extra protein. Definitely a nice base recipe - 3/21/17
