Ingredients

    16 oz dry spaghetti, cooked
    1 lb. velveeta light cheese
    12.5 oz can chicken breast, drained and flaked
    10 3/4 oz can 98% fat free cream of mushroom soup, undiluted
    10 3/4 oz can 98% fat free cream of chicken soup, undiluted
    10 oz can diced tomatoes and green chilies (Ro-Tel)
    4 oz can mushroom stems and pieces, drained
    1/2 c water
    1 small onion, diced
    1 medium green pepper, diced
    salt & pepper, to taste

Directions

spray slow cooker with non-stick cooking spray

combine all ingredients in slow cooker and stir well

cook on LOW for 2-3 hours. stir again just before serving

    We made it exactly by the recipe. Loved the crunch of the veggies and it was very pretty. Hubby would have liked bigger chunks of chicken and I could have done with a little less onion. But we both thought it was better than our previous higher fat version! - 9/15/09

    Even though I got this recipe from someone who forgot to include the rotel & mushrooms, I thought it was very good & filling. I did sub a 4oz can green chilis drained for the green pepper & I used whole wheat spaghetti. I would definitely make again, next time using rotel & mushrooms, of course. :-) - 2/25/08

    I make a similar dish, just not in the crockpot. cook chicken breast and 1/2 rotel together in a pan. Then mix velveeta 1/2 can of rotel and a lil milk. when spaghetti adn chicken are complete this is yummy! super quick! - 10/4/08

    Incredible!
    Super good! Used fresh chicken thin sliced breasts, whole wheat pasta and sauted mixture of mushrooms. Adjusted crockpot to high for 2 hours and low for 1 hour. Easily makes 1/2 recipe. - 3/19/08
