Ingredients

    1 can black beans, rinsed and drained
    1 can corn, undrained
    1 can RoTel, undrained
    2 chicken breasts
    1 pkg ranch dressing mix
    1 tsp cumin
    1 tbsp chili powder
    1 tsp onion powder
    1 (8 oz) pkg light cream cheese

Directions

Drain and rinse black beans. Place chicken at the bottom of the crock pot, and pour the whole can of corn, rotel and rinsed/drained black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

    I've made this several times, I found the recipe somewhere else online... so easy and so good! I'm happy to see calories aren't too high! Mine is definitely done after 5-6 hours, even with large chicken breasts. - 6/23/13

    This was outstanding! I made it exactly as shown with one addition (a finely chopped small jalapeno). Since I am concerned about additives, I found an organic ranch mix. I found a RoTel-type tomato blend with no additives too. Very flavorful and satisfying. - 3/6/21

    I make this all the time!...especially to take to Sunday lunch at church. I use a 3lb bag of frozen thicken thighs & substitute a can of undrained pinto beans for the corn and let it cook all night. In the morning, I dredge out the chicken, shred it, mix it back in and add the cream cheese. Yum! - 10/1/18
