Ingredients

2 heads of cauliflower
1/4 cup of olive oil
1 1/2 teaspoon of salt
1 teaspoon of pepper
Directions
Preheat oven to 400 degrees
Wash and clean the cauliflower. Cut off and discard the stem. Cut the cauliflower up into small pieces.
In a large bowl, combine the olive oil, salt and pepper. Add the cauliflower pieces and thoroughly coat each piece.
Place cauliflower pieces onto a baking sheet lined with parchment paper. Bake for one hour and turn 3 times during cooking until each piece has a nice brown coloring. The browner they are the better.
Remove from oven and enjoy!

I took roasted cauliflower to a pot luck--my date said, "really?! Cauliflower?! REALLY?!" It disappeared. I loooooove roasted/baked cauliflower! You can't go wrong with simple olive oil & salt/pepper. If you want to mix things up, try adding a little bit of garlic, Parmesan cheese, a Mediterranean seasoning, or use coconut oil! I've tried a lot of different spices & seasoning... most go really well! - 1/30/13

I had blanched and frozen some cauliflower. When I defrosted it, it was cooked just right so I I baked it in the oven for awhile to dry up some of the liquid before I added spice to it. I have high blood pressure so I did not use any salt, just garlic, oregano, and other spices. It was delicious! - 1/30/18
