Introduction

Ingredients

    1 baking potato
    1/2 cup frozen stir fry veggies
    2 sprays of spray butter
    2 tbsp grated Parmesan cheese
    1 tbsp garlic butter fat free croutons, crushed


Directions

Scrub potato; pierce several times; spray butter all over. Set on plate microwave on high 5 to 7 minutes turning over half way through.
Meanwhile, cook veggies in small sauce pan spray with butter and season to taste.
Cut potato in half length wise put veggies on top.
Sprinkle Parmesan and top with crushed croutons.

    I'm going to go back and look at the sodium level, but for those who think it's too high, remember it's A WHOLE MEAL.

    Frozen veggies with beans sautéed with olive oil, red wine, garlic, paprika, s&p, celery salt, parsley and diced dried onions. The veggies were so yummy I only needed a little shredded cheese and no butter. Can't wait for the leftovers! - 8/1/11

    I don't use the oven for 1 potato and use the microwave.
    I like baked potatoes with non-fat yogurt or cottage cheese, too. Protein.

    I do this all the time -- however, I bake it in the microwave for 7 minutes and then in the oven for 8-10 minutes. It tastes more like a backed potato, rather than a micro'd one. I sometimes eat it with just cottage cheese and canned tomatoes or this and add fresh veggies. Always filling and great! - 11/25/08

    Sounds great, of course if you're overly health concious making it in the oven and adding fresh veggies saute'd to the recipe in place of the frozen would come out pretty much the same, just bake it for 50 min at 400 degrees. It's a good recipe. - 11/25/08

    Great recipe, I might omit the croutons for calorie sake, but tasty treat for dinner. You might want to add a dolup of calarie reduced Garlic Herb cream cheese (30 cal Tbsp.) HR_REID 's comment is inappropriate for this. Positive suggestions would better suit this forum then the negativity. - 11/25/08

    I have made this several times with a russet potato and without the croutons and cheese for a healthier version. I just saute the veggies in my wok with some low salt chicken bouillon and a splash of sherry wine. Very good! - 6/7/07
