Introduction

Try this as a side dish tonight! Try this as a side dish tonight!

Ingredients

    • 1 large onion, peeled and finely chopped
    • 2 cloves garlic, pressed or minced
    • 2 teaspoons olive oil
    • 2 cups precooked chickpeas or one 15oz. can garbanzo beans, drained and rinsed
    • 2 tablespoons fresh dill weed, finely chopped
    • 1/2 lb. fresh spinach, cleaned and chopped or torn into bite-size pieces
    • 2 tablespoons lemon juice

Directions

1. Using a large frying pan, sauté onion and garlic in oil over medium heat for 2 minutes.

2. Add chickpeas and dill. Stir-fry for 5 minutes.

3. Add the spinach, a little at a time. Drizzle lemon juice over all ingredients and cover with lid.

4. Cook 5 minutes or until the spinach shrinks. Stir to combine. Serve hot.

Serves 4.

    OMG!! This was great!! I added more garlic though. On my first serving I added mozzarella and red crush pepper on top, it was finger licking good! On my second serving I added hot sauce on top! Oh my! Oh my!! I just loved it! I would definitely make this recipe again and again! Thanks for sharing! - 11/10/08

    I made this like recipe, adding a can of diced tomatoes and 4 servings of cooked orzo pasta. I mixed it all together and dressed with more lemon juice and EVOO. I could have fed an army with all the food it made, I'll be eating it for a week. Good thing it was absolutely delicious!! - 3/11/09

    I really like this dish - I love spinach and the chick peas make it a protein-rich meal that is quite filling and satisfying. I added green, red, and yellow bell peppers and tomatoes (cleaning out the fridge :) as well as some Frank's Red Hot sauce. Very good! Thank you :) - 1/10/09

    We love Spinach. The nice thing about this quick recipe is that you can alter it to fit any ethic food. Add cumin ans seasme it becomes Mid Eastern, Seasme Ginger (Ken's) & some Mung bean sprouts it becomes Asian. Add italian or Ceasar dressing. You get my point, this dish is a very flexible base. - 10/31/08

    It was a very good dish, my dh and I enjoyed it. Next time I make it I will add more garlic and some hot pepper flakes though. I think I will switch it up another time and try the canned tomatoes and feta. A very versatile dish :) - 4/28/09

    I used kale instead of spinach, and it was delicious! I didn't have any garlic, and I think it would have been even better with that. I also added a little cracked red pepper a little kick....YUM! - 10/27/08

    This wasn't bad. I think next time I will add more spinach, a few less chickpeas, mushrooms, and more garlic, skip the lemon juice. I really do like that I have another recipe to help me get veggies in. This is not a bad recipe at all, I just need to tweak it to meet my tastebuds! - 9/20/09

    This is delicious! I used frozen spinach to make it easier and added some diced extra firm tofu to crank up the protein, and I absolutely loved it. This is one I'll be making again! - 9/15/08

    Awesome starter recipe! I added 4oz reduced fat feta cheese, 1 c part skim ricotta and 4 reduced fat laughing cow swiss cheese wedges. It was so delicious and I ate the leftovers for lunch the nex day! Even my picky toddler ate it! Similar taste to Spanakopita! Thinking of baking it in phyllo. - 12/27/09

    I loved this, but made some changes. I used a couple of teaspoons of curry powder instead of the dill and a generous shake of red pepper flakes. I also added a red pepper that was very finely chopped as it adds a lovely sweetness to the dish. I eat two servings as an entire meal! - 4/25/09

    I'm betting most of the salt comes from the canned beans. Rinsing them before using them can reduce it or using dried beans you cooked yourself. It's just a guess, but it's the only place it seems to come from. - 3/11/08

    I made this last evening for a dinner party for some vegetarian friends of my daughters. They thought it was lovely. After I finished cooking the chick peas and spinach I added a little salt and pepper and grated lemon peel. I toped it off with more fresh dill. - 3/8/08

    I added two more garlic cloves and about 2oz less spinach. I thought it was really good! Had a lot of flavor from the onion, garlic and lemon juice - I think I might have added a little more than two tbsp. Definitely wil make this again! - 3/8/08

    When I buy chickpeas, I like to cook them all at once. This was a great way to use the cooked chickpeas. Totally delicious, even with dried dill instead of fresh since that's what I had. I did add a bit of salt and pepper and topped with a little grated pecorino romano cheese. Yum! - 12/28/12

    I love chick peas and this is a great way to eat them.I made the entire batch and ate a single serving for lunch.I made a single change Balsamic vinegar for Lemon juice.It was great next time I added 18 grapes and 1/4 cup of cottage cheese. I served it hot but in summer I will try it as a cold salad - 3/4/10
