Ingredients

    4 small new potatoes (red or white, about 1 1/2 inches in diameter)
    2 tablespoons butter
    1 clove garlic, minced
    1 teaspoon chopped fresh thyme leaves
    1 teaspoon chopped fresh rosemary leaves
    2 small zucchini, cut in 1/2 lengthwise (about 1-inch wide by 5 inches long)
    Pinch kosher salt and freshly ground black pepper
    1/4 cup grated Parmesan

Directions

Bring a medium pot of water to a boil over high heat.
Add the potatoes and cook until just tender, about 8 to 10 minutes.
Drain the potatoes and let cool.
When cool, cut the potatoes in half.
Place a medium saute pan over medium heat.
Add the butter, garlic, thyme and rosemary and let cook until the butter melts, about 2 minutes.
Meanwhile, season the cut sides of the zucchini and potatoes with salt and pepper.
Carefully place the zucchini and potatoes cut side down in the melted butter.
Let them cook until golden brown, about 12 to 15 minutes.

Preheat the broiler. Line a baking sheet with foil. Place the browed zucchini and potatoes on the baking sheet cut side up. Sprinkle the tops with the Parmesan. Place in the broiler until the cheese is golden brown, about 4 minutes. Transfer to a plate and serve.

    Delicious! I made just the zucchini. I didnt have thyme, so I used basil. I cooked it just in the pan, because I didnt want to heat the oven for one serving. Instead, after taking the zucchini out, I put parm cheese in the pan and melted it, then put it on top of the vegetable. I love it! - 3/16/08

    YUMMY!!! I only did zucchini and I added different spices since I was out of rosemary and thyme, but it turned out great! I liked the zucchini straight out of the pan...before I even got the parmesan cheese on it! I didn't find the prep time bad at all without the potatoes! - 2/17/08

    My veggies weren't cooked enough the first night, but I made the servings for four and at 89 calories I ate two servings and saved the second (2) servings to reheat in the microwave - much better with a little extra cooking time. A nice change from the ususal. - 9/6/07

    It did take quite some time. I had to cook for a more then me, which made me double the portion. It was also hard to find small red potatoes. However, it was really worth it. I used to make roast potatoes which are really fatty. This was a great substitute. - 3/23/07

    be careful...calories are off. Each serving should have 1 potato, not .25. Also, each serving is 1/2 T of butter and not .25 like was calculated in the nutrition info. - 9/10/09

    Ok, I liked this dish but prepared it a bit differently...
    I Cut up the potatoes and zuccini I placed in a ziplock steam bag added the rosemary, thyme, garlic, and butter shook it up mixed it well and microwave on high for 8min. I then added mixture to baking dish, top w/ parm cheese & broil 2-4min

    The Carbohydrate count is incorrect on this recipe, based on 4 servings. The 4 small potato's have approximately 30 g carbohydrates each and not 8.2 g. If you are a Dibetic watch out. - 11/4/09

    I'm making this for tonights dinner, as so many people rated this so highly. I'm giving it a low rating though because I was just about to make it and thought the calories looked odd. Sure enough 1 small potato, when the recipe calls for 4 and 1tbsp butter when it calls for 2. ARG. - 8/14/08
