Ingredients

    2 cups reduced-sodium chicken broth or vegetable broth
    1/2 cup and 1 tbsp dry lentils
    1/2 cup and 1 tbsp chopped onion
    1/4 cup and 2 tbsp uncooked brown rice
    3 tbsp dry white wine, or chicken broth
    1/2 tsp dried basil
    1/8 tsp salt
    1/4 tsp dried oregano
    1/8 tsp dried thyme
    1/8 tsp garlic powder
    1/8 tsp pepper
    3/4 cup shredded reduced-fat Swiss cheese, divided

Directions

In a bowl, combine the first 11 ingredients; stir in 1/2 cup cheese.
Transfer to a 1-1/2-qt. baking dish coated with nonstick cooking spray
Cover and bake at 350*F for 1-1/2 to 2 hours or until lentils and rice are tender and liquid is absorbed, stirring twice.
Uncover; sprinkle with remaining cheese.
Bake 2-3 minutes longer or until cheese is melted.

    This recipe is a great, simple way to enjoy lentils and brown rice and was very good just as is! I also enjoy the potential for experimenting. The second time, I added a 1/4 c more rice and 1 cup crushed tomatoes. WOW! Very flavourful! Can reduce sodium by using 1 c water, 1 c chicken broth, too! - 2/6/10

    Very tasty. This is an amazing, hearty meal/side. I used all vegetable broth for liquid and put it in the crock pot over lunch like others recommended. It was ready for me when I got home. Cheers! to LILLAKE for sharing this recipe. - 7/30/10

    Fantastic tasting. I added some Mild Rotel to the ingredients to rev up the taste & metabolism/calorie burning. This will become a Winter family favorite.

    I made this for dinner tonight-- it was so delicious! I made it just like the recipe except I used half swiss and half mozzarella-- my daughter's boyfriend is a vegetarian so every wed when he comes over i get to try a new vegetarian dinner-- we had this with fresh grilled zucchini-- YUM!! thanx - 10/15/08

    I have a healthier lentil and rice pilaf I make that is of Middle Eastern origin and is vegan. Uses bulgur or rice, onions, garlic, lentils and olive oil and that's it! It is delicious!     Delish! Very filling and low in calorie. I will make this over and over again. The only thing I would add is that when I stirred after 45 minutes I found it completely dry and so I added another cup of broth, but water would work as well. This was a perfect lunch! - 10/8/12

    Very pleasant surprise. Smells delish & tastes very good. Didn't have the cheese -didn't need it. I had a "culinary broth" that had the herbs and wine & added my own. Next time will use a low sodium variety - but I will make it again. - 12/18/10

    This is a great recipe, one of my stand-by meals. I use red wine instead of white wine, and home-made vegetable stock. I also add a can of crushed organic tomatos for extra moistness and flavour. - 12/4/08

    I made this and although it smelled amazing the texture was terrible. Did use organic vegetarian vegetable broth instead of chicken broth and added some fresh garlic. I could not eat more than a couple bites of this and I threw it away. - 11/4/08

    This was very good, but I followed another member's suggestion and added salsa. I also had a 1/4 less cheese. I don't know how it would have been without the salsa, but the extra 44 calories a serving was totally worth the taste.     I tried the slow-cooker method for 6 hours but the lentils were still chewy. Next time I'll use water instead of broth; use red lentils; switch to Mexican instead of Italian herbs; & add all cheese at end instead of baking it in (to avoid gummy texture). - 12/21/10

    A good recipe but rather bland. Think I would take the suggestion of adding Rotel or salsa. Son would not eat it. Daughter added extra cheese. I did do it in the crockpot which made it super easy. - 12/20/10

    Ok. Yummy. . . I was a little skeptical, but my drive to find tasty and quick recipes using lentils led me to try this recipe out. We ate it with grilled pork chops and it was a tasty compliment. I used mozzarella cheese and basmati rice. I cooked at 400 degrees for 50 minutes. - 4/14/09

    I will try this recipe tonight, serve it along with some whole wheat tortillas. It sounds really good. I'm always looking for new vegetarian dishes as we try to eat vegetarian meals a couple times a week. I have plenty of meat in the freezer, but don't want to eat it every night.

    It was delicious! And Sarahsueblue is right...it kind of has a meaty texture!

    I love it because it kind of tastes like a cheeseburger. I used reduced fat shredded mozzarella instead because I don't like swiss. But was DELICIOUS!
