Introduction

Game meat chili. Game meat chili.
Number of Servings: 10

Ingredients

    2 lb moose meat (small cubes)
    900 g dry chili beans
    900 g dry kidney beans
    2 cans diced tomatoes
    4 tbsp chili powder
    4 tbsp Garlic powder
    2 lg onion (chopped)
    10 cups of water

Directions

Brown moose meat and rinse grease after cooking (this is a very lean meat so fat should be minimal).
Combine all ingredients into a large stock pot and simmer for 4 hours on minimum stirring occasionally to avoid sticking.
Each serving is approx. 2 cups.

    I've made a recipe exactly like this many times before. It's amazing! The moose gets so tender. I like to add a can of crushed tomatoes to mine however and a little less water. - 6/10/08

    I never soak my beans and they always come out tender! This is a general recipe for chili so I would think any kind of meat would work. - 10/1/08

    We eat lots of venison and use beef/pork/moose/elk recipes pretty much interchangeably. This recipe says nothing about soaking the beans first. Do they get done in 4 hours? - 10/1/08

    I will ask my daughter to FedEx me a package of Moose Meat- She still lives in Anchorage, Alaska. Mostly she sends halibut or salmon. Recipe sounds good, I will try. - 10/1/08

    Sounds like it will work with deer and goose. we use both when we make chili and the combo is called hoof and wing chili. Just replace the moose with one pound of goose and one pound of deer. Very good!! - 3/25/08
