Ingredients

    4 oz tilapia fillet
    4 stems cilantro (approx.)
    1/2 lime, zested and sliced
    1 tsp seasoning (to taste)

Directions

Preheat oven to 425 F.

Rub seasoning on tilapia fillet to cover. (I used a Szechuan seasoning blend; you can use that, or another Asian seasoning blend, or any type you prefer!) Sprinkle lime zest over seasoned fish fillet.

Place fish fillet on a sheet of baking parchment. Layer sliced lime to cover fillet as much as possible. Place cilantro stems to either side of fish fillet.

Cover baking parchment with another sheet of parchment. Roll in sides to produce a pouch. Place the pouch in an oven-safe baking pan.

Bake uncovered at 425 F for 20-25 minutes, until fish is cooked through.

    This is a great recipe; so full of flavor. I used kitchen twine to tie up the parchment so it wouldn't unfold. Also, when serving, I squeeze the cooked limes over the fish...that gave it even more flavor. For the seasoning, I made a mix of garlic powder, cumin, salt, pepper, and NM chili powder. - 3/13/08

    I followed the advice of another reviewer and added cumin, chili powder and paprika. I also wrapped the fish in parchment and then foil and it cooked perfectly. Very moist and flakey. I also added several grape tomatoes to the packet and they roasted nicely. My husband said we can make this again. - 9/26/12

    My husband and I love tilapia, and we love cilantro and lime so this was the perfect food for us! I didn't use any "seasoning" just freshly ground sea salt and pepper. So delicious! - 2/5/10

    Incredible!
    I have felt a need to develop a taste for fish for quite some time. After pressure from my sister to try tilapia, I found this recipe.
    It would have been perfect, if I just hadn't over-done it with the seasoning. All it needed was a dusting of garlic powder. That's how I will make it next time.

    Very Good
    This was great low cal meal. We changed it up a bit by putting it on the grill in the packet. Cooked great that way. Only complaint was that the lime was a little overpowering for me. (My husband loved it!) Next time I'll use less lime. - 7/28/08
