Introduction

Number of Servings: 8

Ingredients

    4 red bell peppers
    1 lb ground turkey
    1/2 cup onion
    14oz tomato sauce
    1 cup cooked rice
    3 oz grated cheddar cheese
    2 tbsp Parmesan cheese

Directions

Cut off tops of peppers and remove seeds and membranes. Cook in boiling water for 5 minutes and let them cool.
Brown the ground turkey and onion.
Stir in tomato sauce and salt and pepper.
Add the cooked rice and let simmer for about 10 minutes.
Add the cheddar cheese until it melts.
Slice the pepper in half lengthwise, put in baking pan and fill with turkey mixture.
Sprinkle Parmesan cheese on top.
Bake at 375 degrees for about 10 minutes.

    This was great but I did several things differently, which I believe improved the recipe. First of all, I used the salvageable part of the pepper tops to chop up and saute along with the turkey and onion. Next, I used brown rice, which is more healthy. And, I used Kraft 2% milk cheese. - 2/3/08

    I made my beef mixture, stuffed the peppers with the mixture UNCOOKED, then placed them in oven at 350 degrees (covered casserole dish or pan), for about 35 minutes. The peppers were lovely and moist as was the meat stuffing. I enjoyed using the red peppers, (sweeter flavor appealed to my kids). - 5/25/10

    This was a great way to do stuffed peppers when U were low on time, or didn't want to run the oven long. It did need a little more flavor, but that's easily solved with spices & maybe spaghetti or pizza sauce. My 2 guys loved it. - 8/21/07
