Number of Servings: 4

Ingredients

    1 pound Chicken Breast (4 pieces) boneless/skinless
    2 Tbsp 'I Can't Believe It's Not Butter Light Spread
    1/2 Cup Orange Marmalade
    1/2 Cup Orange Juice
    2 tsp Ground Mustard
    1 Tbsp Low Sodium Soy Sauce
    2 Tbsp Corn Starch

Directions

Melt butter in large skillet
Cook chicken 15 minutes, turning once
Mix all other ingredients in bowl
Move chicken to plate and drain juices from skillet
Pour liquid ingredients into skillet and cook for about 2 minutes until glaze starts to thicken.

Pour over chicken.

Side Suggestions: Brown Rice & French Style Green Beans

    Incredible!
    I had a pineapple marmalade,so I used pineapple juice and kept the other ingredients the same. It's good as "Hawaiian Chicken" too! - 2/18/08
