Ingredients

    2 Eggplants (About 1.5 lbs total)
    2 Cups of Sauce
    2 Egg Whites
    1/2 Cup Plain Bread Crumbs
    1/4 t Black Pepper
    1/4 t Salt
    6 T Parm Cheese
    1-1/2 Cup Mozzarella Cheese

Directions

Preheat oven to 400

Peel and slice eggplant into 1/4 inch size.

Egg white wash and coat with breadcrumbs, parm cheese, salt & pepper

Bake in oven for 15 minutes. Flip and repeat.

Remove from oven.

Layer tray as follows:

1/2 cup sauce
Layer of eggplant
1 cup of cheese
Layer of eggplant
1-1/2 cup sauce
1/2 cup cheese
Sprinkle with parm

Bake 15-20 minutes




Serving Size: Makes 6 Servings
