Ingredients

    1/2 cup V8 Vegetable Juice, Low Sodium
    1 cup Lentils, mashed
    1 cup Onions chopped
    1 cup Celery finely chopped
    2 cloves Garlic minced
    5 tbsp Chia Seed
    1/2 cup of Bread crumbs
    1 1/2 pounds Lean Turkey, Ground
    Salt and Pepper

Directions

Preheat the oven to 350 F

Combine juice, lentils, onions, celery, garlic, salt and pepper in a bowl.

Add chia seeds and stir. Let stand for 15 minutes.

Grease a 5 X 9 loaf pan.

Add the turkey and bread crumbs to the mixture and combine all ingredients.

Put the mixture into the prepared loaf pan and cover with aluminum foil.

Bake until golden (about 90 minutes). Remove the foil for the last 10 minutes. Let stand for 15 minutes before slicing.

Serving Size: Makes 6 servings.

    Your calorie count is off. Chia- (1T/12g)...and you put 5g in instead of 60g. This adds 46 calories per serving. - 5/20/13

    I thought this was good. I baked it the night before. It could use more seasonings. I added cumin and garlic. I replaced some of the bread crumbs with ground flax seed. I also used ground chicken because it was on sale. I would make it again, spice it up a bit

    This was wonderful! Absolutely the most delicious meatloaf I have ever had! I added about a cup of chopped bell pepper as well and it was a hit! - 9/8/13

    Very Good
    Made as directed but next time will add more seasonings. Only cooked for 1 hour, took off cover, then 10 minutes and was done. Always use a flat pan with lid for meatloaf as easy to serve from but still think 90 minutes would be bit much. - 1/17/18

    90 minutes sounds a bit long. Most of my meatloaf recipes are 1 hour. Has 90 minutes worked for everyone? - 3/3/13
