Ingredients

1 cup red lentils (soaked for about four hours)
3 cups of red rooibos tea (yep, tea! we had leftovers and I thought I’d be creative)
2 apples, diced
1 tbsp cinnamon
1 tsp clove
1 tsp turmeric (optional, but highly recommended)
Maple syrup
Vanilla-flavored coconut milk beverage (not canned)
Directions
Bring the lentils and the tea to a low boil and then reduce heat to low to medium.
After about ten minutes, add in diced apple and spices. Stir and then cook for 25-30 minutes, until the lentils are mushy.
Serve in small bowls, and drizzle of maple syrup and a generous splash of coconut milk

I just made this. I used Celestial Seasonings Cinnamon apple spice tea. The flavor of the tea tricks my mind into thinking the dish is sweeter. I reduced the cinnamon to 1 tsp & the cloves to 1/2 tsp. I think it's sweet enough w/the apples & didn't use the syrup, 1% milk, & for me,this is a dessert - 4/16/13

I used Chi tea, but that was a mistake; the dish turned out bitter. I tried cooking overnight in a slow cooker. That didn't work either; the lentils were still hard in the morning and I had to cook on the stove to soften. Even with ignoring the bitterness from the tea, I didn't like this dish. - 4/19/13
