Introduction

Ingredients

    • 1 cup uncooked rotini pasta
    • 3/4 lb. new red potatoes, cut into 1/2" wedges
    • 1 cup broccoli flowerets
    • 1 cup baby carrots
    • 1/2 cup frozen snap pea pods
    • 1 tablespoon olive oil
    • 2 tablespoons parsley, chopped
    • 1 teaspoon dried dill weed
    • 1/2 teaspoon salt

Directions

1. Cook rotini pasta according to package instructions.



2. While pasta is cooking, place steamer basket in a 3-quart saucepan filled with 1/2" of water.



3. Fill basket with potatoes, broccoli and carrots. Bring water to a boil then reduce heat to medium-low and steam for five minutes.



4. Add pea pods, cover and steam 2-3 minutes or until potatoes are tender.



5. Place steamed vegetables in a medium bowl and toss with cooked rotini, olive oil, parsley, dill and salt until well coated.



Serves 4.

    This dish was surprisingly good! I grew up in an Italian household, so holding back on things like garlic & onion made me wonder! It's good just as it's written! You have to have a little of everything to get the full flavor of this dish! - 7/9/09

    I really enjoyed this. I doubled the recipe and ate it as pasta salad the next day, then I added some vegetable broth and Mango Chipoltle spice and had a spicy soup the third day, very nice. I will definitely make this again and again. - 3/20/14

    Delicious! I changed some of the vegetables to reflect what I had at the time, and it's very versatile that way. I also changed the spices, as I'm not a fan of dill, and included a large tablespoon of sundried tomato pesto, and boiled the pasta with water and vegetable broth for more flavour. - 4/17/11

    Love the idea of this I will use wheat rotini I keep a drawer in my freezer with steam fresh veggies I just thow in Microwave I can see any low calorie salad dressing too.. YUMMMMMMM - 2/6/09
