Introduction

This is a variation of the lemony garlic chicken. I didn't have chicken breast, so I used skinless thighs. I didn't have bouillon, so I used cream of chicken soup. Ingredients

    * Chicken Thigh, 8 thigh, bone and skin removed
    * *Campbell's Cream of Chicken Soup (98% fat free), 1 cup
    * Garlic, 3 cloves
    * Juice of one (1) Lemon
    * Water, tap, .25 cup (8 fl oz)
    * Oregano, ground, 1 tbsp
    * Pepper, black, 1 tbsp
    * *Extra Light Olive Oil, 1 tbsp
    * Lower Sodium Stove Top Stuffing Mix, 1 Box
    * I Can't Believe It's Not Butter, Original Buttery Spray, 1/4 cup
    * Parsley, 2 tbsp

Directions

Remove skin from thighs.
Place in bottom of slow cooker.
Mix Oregano, Olive Oil, Water, Soup, Pepper, Garlic and Lemon Juice. Pour into Crockpot and coat chicken.
Mix butter and stuffing and place on top of chicken mixture to create a kind of crust..
Cook on LOW for 6 hours. Enjoy!

Feel free to add green beans, peas, carrots, and other frozen veggies for added nutrition. Just remember to add them to your tracker.

I add them separate cuz I have a picky toddler!

    Wow. That's tasty! My husband loved it! If I hadn't added peas the kids probably would have like it too (sigh). I used b/s chicken breasts and cream of mushroom soup as that's all I had and it still tasted great. The lemon makes it!!! - 9/23/08
