Introduction

over rice over rice
Number of Servings: 6

Ingredients

    1 Lb Ground Beef
    1 large egg
    1 tsp Corn Starch
    1 1/2 tsp fine chopped onion

    Sauce:
    1/3 cup pineapple juice
    1/3 can pineapple chunks
    1 small green pepper
    3 tbsp vinegar
    3 tbsp water
    3 tbsp cornstarch
    1/3 cup sugar
    1 tbsp soy sauce
    2/3 cup stock

Directions

Mix well and form into balls about the size of a walnut. Fry and turn in hot olive oil until brown. When brown remove to baking dish.

In oil of meat add:
1/3 cup pineapple juice and 1/3 of can of pineapple chunks
1 small green pepper, cut into small pieces and cook over low heat a few minutes.

Make Sauce by adding:
2 Tbsp Vinegar
3 Tbsp Water
3 Tbsp Cornstarch
1/3 Cup Sugar
1 Tbsp Soy Sauce
2/3 Cup Stock
Cook until thickened, then add to Meat Balls.
Bake for about 15 minutes while flavors blend
OPTION: Put meat balls and sauce in a slow cooker and set on low. Can serve right from slow cooker.

    Very tasty. The recipe makes about 30 small meatballs- so 5 meatballs per serving. It's not a big serving, but farily filling if served over noodles or rice. You will probably want to serve this with a salad, vegetable or both. - 3/24/08
