Ingredients

2 lbs low-sodium corned beef brisket
1/2 head of cabbage, cut into large pieces
1 medium onion, cut into large pieces
3 medium potatoes, cut into large pieces
1 tbsp pepper
1/2 tsp salt
6 cups water
I add the salt because the low sodium brisket is so substantially lower in sodium than the full brisket, that a 1/2 tsp of salt adds the flavor with substantially less sodium.
Directions
Put all ingredients except corned beef in a crock pot.
Place corned beef on top of other ingredients.
Turn crock pot on low and let cook for 6 - 8 hours.
Makes 8 - 10 servings

I layer onions in the crock pot with corned beef and leave it all day. I microwave carrots Turnip and potatoes just before supper and add them hot to the pot. I add cabbage in wedges 1 hour before serving.I microwave the wedges till they are bright green and add them Veg stays bright and firm. - 3/17/11
