Introduction

Ingredients

    1 cup canned pumpkin
    1 cup brown sugar
    2 eggs
    1tsp vanilla
    1.5 cups whole wheat flour
    1 tsp baking soda
    1 tsp cinnamon
    .5 tsp salt
    3 cups oatmeal
    1 cup dried cranberries (craisins)
    .5 cup almonds

Directions

-Heat oven to 350 degrees
-Beat together pumpkin and sugar
-Add eggs and vanilla, beat well
-Add flour, baking soda, cinnamon salt ; mix
-Stir in oats, craisins and almonds
-Drop rounded spoonfuls onto ungreased cookie sheet
-Bake 10-12 mins.
-Let cool one minute
Enjoy.

    Made these before reading reviews. I added 1/4 cup applesauce, doubled the cinn. and vanilla, subbed Splenda brown sugar, flattened the cookies with fingers before baking and used half the nuts. Chewy, yummy, less calories and yummy! Thank you for sharing the recipe. - 3/8/08

    I wonder if it would help to add more pumpkin than the recipe calls for in order to make them less tough and dry. I'll try it and let you know...........
    I made them and I thought they were okay. Mine didn't flatten either but I do think it helped to add 1/2 c more pumpkin.

    They were very good! For the small amount of calories you get a cookie that actually satisfies you with just one! My husband loved these as well and he is a "cookie snob"....My grandkids will enjoy these because they like granola bars, can't wait to take some to them. Thank you! - 12/14/09

    I followed all of GEMNIDREAM's suggestions & these were fantastic! I used medium sized eggs and Irish steel cut oatmeal, just because that's what was on hand . Mind you, these are not wimpy little oatmeal cookies - they're hardy & very flavorful!!Thanks for a great recipe ; - 12/11/08

    ALL my favorite elements in one cookie. I lowered the glycemic index a bit by using half brown sugar and half no cal brown sugar. Could use Splenda brown sugar blend too. I used a full cup of almonds. It was AWEsome - 12/4/08

    My daughter made these and they turned out SUPER!! She wasn't keen on trying them because of the pumpkin, but she was a good sport and ended up LOVING them. They have a great flavor. We weren't sure what to look for for fully cooked, but I think being a bit under cooked worked out well!!! - 12/27/07

    I don't know about the other ratings, but I thought these were great. If you aren't a fan of oatmeal, then these might not be for you. I thought they had great flavor! I think next time I may add some raisins... - 2/10/08

    I made them and like them, as do my daughter and all the kids I watch. I had to flatten the cookies after the first batch didn't spread. Also, I would consider these more like a homemade granola bar rather than a cookie because of the consistency. It's a good healthy snack though - 12/12/08

    The cookie was extremely dry and had no flavor. It didn't turn out at all like the picture. Perhaps using some pumpkin spices and more moisture would have helped. - 12/4/11

    These cookies were VERY dry and hardly edible. For some reason you could hardly chew them. They might be ok in EXTREMELY small portions with a cup of hot tea, but chewing rubber would be the same. - 12/15/07

    VERY tasty and healthy! As another user said, they didn't flatten for me either, but I that's probably due to to no butter or oil. It sure doesn't affect the taste! Hubby and I will be fighting over them. We didn't have quite enough craisins so he put in a bit of a dried berry mix we had on hand. - 12/10/07

    I wonder if people are taking into consideration that whole wheat flour soaks up moisture like a sponge. I am gluten free so I used gluten free flour (sorghum, oat, potato mix) and lowered the oatmeal to 2.5 , added the applesauce suggested, doubled the vanilla, added nutmeg and they were wonderful - 12/4/10

    I'm going to give these a try. Having made muffins with oatmeal and whole wheat flour that came out nice and moist, I'm thinking that I may sub applesauce for most of the brown sugar for a moister cookie. Also, I'll leave out the almonds. Hubby won't eat cookies with nuts in them. - 12/4/08

    This just didn't turn out. They really never turned into cookie form. Just globs of all the ingredients. They didn't taste bad, just bland. I tried turning it into a kind of crisp, throwing all the ingredients into a bowl, adding some apples, brown sugar and cinamon, but it still wasn't great. - 12/15/07

    I really liked these - as did friends that I shared them with. They took a bit longer to bake than stated & needed smooshing. Next time I'll replace 1/2 the WW flour w/ soy & almond flour & add a bit of silken tofu to up protein. I used splenda brown sugar baking blend & egg substitute-worked well. - 12/16/08

    the one or two people who said this recipe was great are crazy - this recipe as it stands is not tasty, does not turn into edible flat cookies - doesn't seem to cook right at all - after much adding of more sugar, butter, baking powder and a bit of self rising flour it was still barely edible - 12/21/07

    Please use fractions instead of decimals. If you must use decimals, please put a zero before the decimal so we know there's no missing number. Examples from this recipe: .5 tsp salt and .5 cup almond. Please use "0.5 tsp" and "0.5 cup". - 11/7/14

    After reading several reviews, I added almost a whole can (15 oz) of pumpkin and doubled the vanilla. I also flattened my cookies down using wax paper so they would not be so sticky on my fingers. Delicious! I will make these again. - 1/11/13

    I made this recipe to take into the office for the holidays. Everyone loved them! I changed it up a bit by doubling the amount of cinnamon and vanilla, adding 1/4c unsweetened applesauce, and using Splenda brown sugar. I also flattened out the cookies a little before baking.     Followed GEMINIDREAM's modifications except decreased the oats to 2.5 cups and used real brown sugar. Also added a bit of Almond Extract. Turned out GREAT! These are healthy enough they could be breakfast "cookies" really! - 12/13/10

    I added 1/2 c. applesauce and 1/2 tsp. nutmeg; used only 2/3 c. brown sugar, 1.5 tsp. vanilla, quick-cooking (not instant) oats, and large eggs; then flattened them a bit before baking. Baked only 10 minutes. Will also try raisins, walnuts, add some chocolate chips, and/or use sweet potato. Great! - 12/4/10

    These cookies taste great..fibery and healthy! I'm glad that recipes that do not use a ton of butter exist. I used brown sugar Splenda instead of real sugar, so my version has less calories to boot. - 11/8/09

    In spite of the negative reviews, these look great. You certainly can't complain about a cookie having only 64 calories!!! When I make them, I'll have to sub the cranberries & almonds for...? maybe raisins & cashews, since we can't get the former here. - 12/4/08

    I added a bit more wet ingredients and cut back the dry ingredients after read the other comments. The cookies came out very moist just how I like them. I added 1/2 cup of applesauce and cut the oatmeal to 2 cups instead of 3. I also cut the cranberries and almonds in half. - 9/10/13

    Substituted apple sauce for the pumpkin and went a little light on the sugar. Just enough sweetness. Also used 1/2 cup white flour instead of all whole wheat. Very dense, nutty cookie. Will make again. Husband gave it a thumbs up. - 2/17/13

    Even with a better oven, I usually ruin easy cookie recipes. This recipe may be fool proof. We had missing ingredients, made several substitutions, but see this is a great basis. If the dough is very dry, unsweetened apples sauce works to moisten. - 12/17/12

    I thought these were very good. I would only put 3/4 cup brown sugar next time, as the craisins added sweetness, and 2 tsp of cinnamon! Loved that they were grainey/chunkey. ???? how many should you get out of a batch? - 12/5/12

    They may be low fat but they certainly are not healthy. The dried cranberries are the worst for sugar content. You never seem to use Splenda. Almost all of these receipes are terrible for diabetics. For those reasons I will no longer be using your services. - 12/5/12

    Not a fan - added extra 1/2 cup pumpkin, extra t of vanilla and cinnamon and omitted nuts - lacked flavor and were dry when baked for 10 mins and when underbaked. I'd rather go without cookies than eat these. - 10/29/12

    I haven't tried it yet, but read the reviews. I wonder if the difference in oatmeal is what is causing the difficulty, and the difference in size of eggs. Those two things could make the difference between delicious and disaster. I want to try them soon! - 12/9/08

    I like the fact that there is no oil or butter, no white flour and no white sugar. They are very cakey, which is not a bad thing; however I would add the applesauce another Sparker suggested. Excellent with a cup of coffee. DH (who has no weight problem) wanted a bit of icing. - 11/18/20
