Ingredients

    1 cup raw or roasted almonds
    ¼ teaspoon sea salt
    1 tablespoon canola oil (or you can use sesame or other unrefined oil)

Directions

While almond butter can be made from raw nuts (which will give you the most nutrients), roasting the nuts just prior to making the butter considerably enhances both flavor and aroma.

To roast the almonds, spread them in a thin layer on a baking sheet at 300°F for about 20 minutes. Stir a couple of times to assure even roasting. (or buy already roasted nuts)

Combine the almonds and salt in a food processor, blender, juicer, coffee grinder, meat grinder or nut butter machine and process until the nuts are finely ground. (If you used a coffee grinder, switch the nut powder over to a blender at this stage.)

Add the oil and continue processing until the almond butter reaches your desired degree of smoothness, adding more oil if necessary. For chunky butter, stir in ¼ cup chopped almonds. Store, tightly covered, in the refrigerator.

Variations: Substitute Brazil nuts, cashews, hazelnuts or macadamia nuts for the almonds. Or combine two or more of these nuts in any proportion.

Makes about ¾ cup.

    Sounds good, but what I don't understand is why anything is needed beyond the almonds. I toss raw almonds into the food processor and run it til I have almond butter. It's delicious as is. - 3/2/13

    This is very tasty. I roasted the almonds after spraying them with a little butter spray, sea salt ,cinnamon and sugar. I then processed 1 cup of almonds with the 1/4 tsp sea salt, added the canola oil, atleast 2 tbsp for me, more cinnamon-sugar mix, some organic honey. Halved the mix, +tsp allspice - 7/12/09

    I will make this recipe however, I would not use canola oil. Too much controversy with canola oil... I will use coconut oil and see what happens. - 3/4/13

    Just made this w/ coconut oil instead of canola, and it's the best almond butter I've ever had--MUCH better than store-bought. But half of it is hopelessly stuck in the bottom of my blender! :-p Will definitely make this again when I get a food processor. - 3/4/13

    I made this pretty close to what the recipe calls for. I did add about 2 Tbs of oil and it was a little runny but 1 Tbs was not enough. Have a very excellent flavor. I added a 1/4 teaspoon of vanilla powder. Turned out great! - 11/20/10

    Love it! I roasted 1 cup of whole almonds and an extra 1 tbsp of slivered almonds. I added 1 tbsp Smart Balance oil to the 1 cup whole almonds and blended, removed, pulsed (in blender) slivered almonds and added to the mix. Not as smooth as peanut butter but the flavor is amazing!! - 3/23/10

    What is the serving amount on this one? Would this be a tablespoon? I'm planning on making but just wanted to make sure I stayed in the right serving level. Also I would assume I have to roast my nuts since the pkg says natural and nothing about roasted. - 5/27/09

    This is excellent! I have made almond butter before, but never this good. Must be the roasting that makes all the difference. I ground them in my food processor, than ran it through my Champion Juicer (in nut butter mode). Turned out gooey, just like peanut butter... only soooooooo much better! - 4/30/09

    I have tried making almond butter in the past but I did not add any oil at all and my food processor overheated. I then tried to make it again using my vitamixer with the same results, it overheated and shut down. I guess I needed to add some oil. Will try again. - 6/17/17

    I love Almond Butter and am so glad that I happen to come across this recipe. I doubled the quantity and followed the recipe to a T; loved the taste (did roast the almonds first), but it was a little dry, so I will add a little extra oil to it, when making it today. - 5/12/14

    I just made this. I doubled the recipe (two cups of almonds). Seemed to take more oil then listed above. I also added honey. Very good and I will save this recipe and make again. Thanks. In the end it ended up very runny..maybe to much oil/honey. WIll try again. - 3/30/11

    I made this, and I love it! I added a bit of honey too, since I'm kind of a nut butter wimp! My poor little food processor couldn't handle making it as creamy as I'd like, but it's delicious! - 9/1/08
