Introduction

Ingredients

    • 1 lb. skinless, boneless chicken meat, cut into 1" cubes
    • 1/2 cup onion, coarsely chopped
    • 1 medium carrot, peeled and thinly sliced
    • 1 stalk celery, thinly sliced
    • 1/4 teaspoon salt
    • black pepper to taste
    • 1 pinch ground cloves
    • 1 bay leaf
    • 3 cup water
    • 1 teaspoon cornstarch
    • 1 teaspoon dried basil
    • 1 package frozen peas
    • For the cornmeal dumplings
    • 1 cup yellow cornmeal
    • 3/4 cup sifted whole wheat flour
    • 2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup low-fat (1%) milk
    • 1 tablespoon olive oil

Directions

For the stew:

1. Place chicken, onion, carrot, celery, salt, pepper, cloves, bay leaf, and water in a large saucepan. Heat to boiling; cover and reduce heat to simmer. Cook about 1/2 hour or until chicken is tender.

2. Remove chicken and vegetables from broth. Strain broth.

3. Skim fat from broth; measure and, if necessary, add water to make 3 cups liquid.

4. Mix cornstarch with 1 cup cooled broth by shaking vigorously in a jar with a tight-fitting lid.

5. Pour into saucepan with remaining broth; cook, stirring constantly, until mixture comes to a boil and is thickened.

6. Add basil, peas, and reserved vegetables to sauce; stir to combine.

7. Add chicken and heat slowly to boiling while preparing cornmeal dumplings.


For the dumplings:

1. Sift together cornmeal, flour, baking powder, and salt into a large mixing bowl.

2. Mix together milk and oil. Add milk mixture all at once to dry ingredients; stir just enough to moisten flour and evenly distribute liquid. Dough will be soft.

3. Drop by full tablespoons on top of braised meat or stew. Cover tightly; heat to boiling. Reduce heat (do not lift cover) to simmering and steam about 20 minutes.



Yield: 6 servings--Serving size: 1-1/4 cup stew with 2 dumplings

    Just to start let me say that I LOVE chicken soup in any form. I substituted low fat, reduced sodium chicken stock for 1/2 the water, 2 bay leaves instead of one, a package of frozen mixed veggies instead of peas, and made Heart Healthy Bisquick dumplings. I LOVED THIS!!! - 6/5/08

    Can't wait to give this a try! My husband doesn't like peas, so will subsitute with corn, and add in the calories for that instead....haven't made Dumplings ...so hoping I don't have a problem making them. Thanks! - 5/30/09

    Made it tonight for supper...great taste, I wish I would have read the reviews to know to cut back on the dumplings. I will add more chicken broth next time as there was little 'gravy'. Thanks for sharing ! - 11/30/08

    IT was very bland. Definately needed more flavor. It wouldn't thicken so I ended up adding double the starch to thicken it up more. Still it was pretty watery. Too many dumplings isn't bad, but the cornmeal dumplings just didn't mesh well with this recipie even though I love cornbread! - 11/2/09

    Sounds good. The Dumplin's make it high on Cholesterol. One could use the bag noodles that have no egg yolks in replacement for Cholesterol intake on this one. - 5/30/09

    My husband and thought this was just ok. The stew was good, but not very thick and the dumplings were dense. That may just be the nature of the cornmeal. I also thought it had a lot of steps and took a long time to make. - 12/7/08

    Good, but needs improvement. Add a clove or two of minced garlic to the start, and sautee. Also, maybe use skinless/boneless chicken thighs. That might make it more rich, and not too much more fat. Also cut the dumplings back by a third. Could even use a can of ff. broth to help w/flavor. - 5/30/08

    So good and filling. After reading some of the other reviews, I made half of the dumpling recipe and it turned out great. I was unsure about using cornmeal but it gave the stew a really nice extra flavor. This will be a good camping recipe, looking forward to making this over an open fire. - 9/26/11

    The taste was bland and, unfortuntately the dumplings did not come out right. They separated and instead thickened the stew. In the end though, the taste was good after shaking it up a bit. I will make again because I like stews and soups but I will use an alternative for the dumplings. - 12/1/09

    I liked this dish, definitely comfort food. I made 1/2 of the dumplings. My package of peas may have been too big, thought there were too many peas - size of package was not listed. I did think it was a bit bland and needed more spices - 9/23/09

    my mouth is just watering while reading the recipe,can´t remember the last time i had dumplings,thouigh we call them dough bouy´s because they are made from a dough and flot on the stew like a bouy on the water.i would give 10 stars if i could.thanks. - 5/30/09

    Very Good
    This is a great recipe that is really adaptable - I made it with left over Thanksgiving turkey. I would recommend either upping the chicken stew part or halving the dumplings. My husband loved it, too. - 12/3/08

    I didn't care to much for it. I couldn't taste the chicken. And the dumplings just were bland. Unless you bite into one that wasn't cooked all the way through and this it tasted bad! I mean, it was ok over all, but I wouldn't make it again. - 2/7/08

    I added extra celery, onion and some cabbage (at the same time as the peas). It was very good, but I agree about the dumplings. I would only make 1/2 of the dumpling recipe. I would also add more broth. Very good, tho, especially on a cold, winter day. - 12/31/07

    without the bones to add flavor to the broth, I think it would be pretty bland and seems kind of shy on veggies also to flavor the broth. I'm not used to having veggies in with my chicken and dumplings. That's more of a chicken pie thing, but this sounds worth making. - 11/26/07

    This was quick and easy - didn't need quite as much cooking time as called for. The kids would have preferred white flour in the dumplings and there were too many for the amount of chicken. I would make half as many but make more veggies too! - 5/31/07
