Number of Servings: 24

Ingredients

    6 large Russet potatoes, baked and cooled
    2 tablespoons chopped fresh chives
    2 slices bacon, cooked and crumbled
    1 cup shredded reduced-fat Cheddar cheese
    1/2 teaspoon black pepper
    1/2 cup reduced-fat sour cream

Directions

Coat two baking sheets with cooking spray.
Slice each potato into four pieces lengthwise. (Start by slicing each in half, then place cut side down and slice again.)
This is easier if the potatoes are cool. They will crumble if they are still warm.
Combine the pepper, cheese, chives, and bacon.
Place the potatoes in a single layer on the baking sheets.
Divide the cheese mixture evenly across the potatoes.
Place under the broiler until the cheese has melted.
Allow to cool for 20 minutes.
Spoon sour cream into a piping bag or ziptop bag with a corner snipped.
Pipe the sour cream onto the cooled potatoes in the shape of football laces and stripes.
Serve immediately.

    I make stuffed potato skins as a very special treat for the big game day.
    Ingredients about the same, although found red potatoes less calories.. I remove a lot of the inside potato.
    Calories are pretty high for these small portions.
    The design is cute.

    Um... serving size is crazy. You are not going to get 4 servings from each potato. That's just nuts. I realize someone is trying to keep the nutritional info on the healthy side, but get real. - 10/9/14

    167 Calories for 1/4 of a potato, 1/12 of a slice of bacon, 4 teaspoons of reduced fat cheese, and 2 teaspoons of reduced fat sour cream? I'm too lazy this morning to do the nutritional calculations, but they seem way off to me.

    My hubby and I love this once in awhile. I have to leave out the chives as my hubby is allergic to al things in the onion family. But they are still yummy. Sometimes I add chopped mushrooms. - 2/6/14

    Mother scooped out potato, mixed in garlic, chive, smart balance, substitute
    turkey bacon crumbles, kraft miracle whip - mix then scoop back into potato.
    cover with other potato skin half. Melt a little velveeta for the lacing!
