Ingredients

    1 lb of cod fillets
    2 medium-sized potatoes
    1 cup bread crumbs
    1/4 cup chopped fresh parsley
    1 small onion, chopped
    2 Tbsp freshly grated Parmesan cheese (optional)
    2 garlic cloves, finely chopped
    1 teaspoon salt
    1/2 teaspoon pepper
    2 eggs, lightly beaten

Directions

1 Boil and mash the potatoes, set them aside.

2 Boil the codfish until it flakes easkly. Drain and flake the fish with a fork. Be sure to remove all bones. (Fish cakes can also be made with salt cod. If so, omit the salt in the recipe.)

3 Mix the flaked fish, the potatoes and the rest of the ingredients together well by hand. If the mixture is too crumbly, add another egg. If too sticky, add some more bread crumbs.

4 Form the mixture into cakes and fry them on medium high heat in a skillet coated with oil or sprayed with Pam.

Makes 12 fish cakes. Serves 4-6.

    I made these and froze the leftover patties. I have had them for a quick evening meal along with a salad and some fruit, very good. My hubby didn't like them as much as I did though, so I have more meals when he wants hamburgers! - 12/20/09

    WOW were these delicious! My mom used to make something similar but out of canned Salmon. I cook a lot so I tweaked the recipe by adding a pinch of paprika and a dash of red pepper. But I'm sure it would have been just as yummy with out my doctoring. - 3/5/09
