Introduction

Number of Servings: 12

Ingredients

    12 wooden skewers, soaked in water for an hour
    12 slices turkey bacon
    1 pound grilled chicken breasts, cooked and chopped into bite-size pieces
    12 cherry or grape tomatoes
    3 hard-boiled eggs, quartered
    2 avocados, chopped into bite-size pieces*

    * If not serving immediately, toss avocado chunks with lemon juice to avoid browning.

Tips

We seasoned the chicken liberally with black pepper.
If desired, serve with bleu cheese dressing.


Directions

Thread the bacon on the skewers, folding each piece back and forth like a ribbon. You want the bacon to be in the middle of the skewer.
Microwave until cooked.
Allow the bacon to cool, then carefully thread two chunks of chicken, 1 tomato, 1/4 hard-boiled egg and 1-2 chunks avocado onto each skewer.
Serve immediately.

    I just have to say that some of the "recipes" lately have been pretty dumb--like this one. And what's with all the dessert recipes on the log in page--why tempt people with endless desserts--not that I'm a big dessert person. I want recipes w/substance that feed a family like SP used to post. - 7/2/14

    I have been loving the whole "salad on a stick" concept lately! I made some Greek salad skewers for a party last weekend and they were a huge hit! As far as the boiled egg comment, you just need to skewer to twice to get it to stay. Or use 2 sticks for stability. - 8/19/14
