Ingredients

    ¾ lb or package of low fat or turkey kielbasa
    3 cloves garlic, minced
    ¾ cup onion, diced
    1 stalk of celery, diced
    2 lrg carrots, sliced
    2 med potatoes, cubed
    4 cups water
    1 can chicken broth, low sodium
    ¾ bunch of kale
    2 cups cooked white beans (or 1 can, drained)
    1 tsp salt
    ½ tsp black pepper

Directions

Saute kielbasa until browned in your cooking pot. Remove kielbasa and set aside. Saute onions and celery in leftover oil from kielbasa for 5 minutes. Add garlic and sauté for 1 or 2 more minutes, making sure not to burn. Add carrots and potatoes to pot and cover with water. Add salt. Bring to a boil and then reduce heat and let simmer for 20 minutes or until carrots and potatoes are semi soft. Add kale, kielbasa and white beans and simmer another 10 to 15 minutes until kale is cooked and potatoes and carrots are soft. Serve.

Makes about 8 servings.

    Toward the end of cooking I thought this smelled far too "healthy" for my liking, let's face it-didn't gain weight eating like this, but it was yummy!. I used a sweet potato instead of white and I'm glad I did. This is a healthy, low cost way to feed a family. Great recipe, thank you. - 9/9/09

    So, I find this recipe on the mobile SparkRecipes app. It's not listed as a soup. On the desktop, it's a soup. I'm going to try it anyway. Perhaps it's hearty enough to be a meal. - 9/12/12
