Ingredients

    2.5 lbs Chicken thighs (remove fat a nd skin)
    1 sliced onion
    6 cloves garlic
    1 cup vinager
    1 cup lite soy sauce
    1 can coconut milk

Directions

2.5 lbs Chicken thighs (remove fat a nd skin)
1 sliced onion
6 cloves garlic
1 cup vinager
1 cup lite soy sauce
1 can coconut milk
cook together first five ingredients until chicken is tender, just before serving add coconut milk, heat through, serve over rice. ( I use brown rice.)
Makes 6 one thigh servings

    What an easy dish to prepare!!! It was a tad bit too "vinegary" for me, but I will definitely make the recipe again, but I will try cutting the vinegar in half. My children and husband liked it...which in my house, it's hard to please everybody! Thanks for the recipe!

    My Mom makes this same recipe with chicken breasts and she loves it. I think it isn't as moist but it is good also.

    I make this at least once a week. Not only is it economical, but it tastes so good. I don't have much time to cook, this is quick and easy to prepare. Best of all, my husband loves it. He is restricting carbs, so I put mine over brown rice while he just eats it as it is. Thanks for the recipe! - 3/31/08
