Ingredients

    1.25 lbs. lean ground turkey
    1 large onion, diced
    1 (1.25oz.)pkg. low-sodium taco seasoning mix
    1 (1 oz.)pkg. ranch salad dressing seasoning mix
    1 (14oz) can low-sodium, fat-free chicken broth
    1 (4oz.)can diced green chiles
    1 (15.25oz.)can whole kernel corn
    1 (15.5oz.)can pinto beans
    1 (15oz.)can vegetarian refried beans,green chile and lime flavored
    1 (14.5oz.)can diced tomatoes with green chiles
    1 (14.5oz.)can mexican diced tomatoes

Directions

Spray a large stockpot with cooking spray. Over medium-high heat, cook the turkey and onion together until the turkey is browned. Add the remaining ingredients and stir to combine. Bring to a boil then reduce heat and simmer for 45 minutes.

Can also be made in crockpot, same instructions just brown meat with onion in a skillet before adding to crockpot. Cook on low for 6-8 hours or high for 3-4 hours.

Makes 10 1-cup servings

    Yum--I used salsa instead of mexican diced tomatoes and also because I was subbing a second can of pintos for the refried beans and mashing. The whole family raved about this recipe--tho they did top it with cheese and had Fritos with it. - 4/20/08

    Incredible!
    I used turkey breast instead of the ground turkey. I was very pleased that the refried beans made the soup taste creamy without all of the fat. I will need to see if I can make this in a lower sodium version. It tastes good. - 10/26/15
