Introduction

This homemade alternative to store-bought granola bars, is a good source of protein, fiber and healthy fats. Tasty and so simple to make! Ingredients

    2 cups rolled oats
    1 cup quick-cooking oats
    1/2 tsp cinnamon
    1/8 tsp salt
    1/4 cup raw almonds
    1-1.5 Tbsp olive or canola oil
    1/3 cup pure maple syrup
    1/4 cup honey
    1/4 cup vanilla-flavored almond milk
    1/4 cup shredded coconut
    Non-stick cooking spray

Directions

Preheat oven or toaster oven to 350 degrees F.

Process 2 cups rolled oats in blender or food processor until they become flour-like. Mix "oat flour" with dry ingredients (except coconut) in a bowl.

Add all wet ingredients to the dry mixture and stir until well combined.

Spray a small baking dish (about 5 inches x 12 inches, or similar) with non-stick cooking spray. Add mixture to the dish, pressing it down with a spatula. Sprinkle coconut on top.

With a knife, cut the whole sheet into 12 bars. Bake at 350 degrees for 15-20 minutes. Let cool, cut again, and store in an air-tight container for up to one week.

    Very good! Easy to make. I added sunflower seeds, cut up the almonds and added dark chocolate chips. Didn't have the vanilla milk, used non fat milk with tsp. of vanilla. Also didn't have the right pan size so ended up using a bread pan. Definately a keeper! - 10/31/08

    I now make these every 2 weeks. This week I am trying 2 tbsp almond butter and 1 tbsp natural pb instead of the oil )2:1 - 2x the nut butters vs. the amount of oil). I added 0.25 c pumpkin seeds and 0.25 semi sweet choc chips. I look forward to my treat of eating these after my workouts! - 7/14/08

    I made my own almond milk and substituted dried fruit mix because I don't like coconut. Wonderful bar! I shared with my DSIL (a fitness nut) and she begged the recipe! Even my 13 year old son likes them... MAGIC! - 1/29/09

    These were simply delicious. I didn't have any coconut or almond milk, added 1/8 cup brown sugar, 1/4 cup sunflower seeds, 1/4 cup pumpkin seeds and 1/2 cup chocolate chips, 1% milk with 1/2 teaspoon vanilla extract, 1 oz raisins and 5 prunes. Should have left out brown sugar-but overall FANTASTIC! - 7/26/08

    Very Good. Will definately make it again. I did add dried mixed fruit. I also subisituted oat bran for rolled oats and worked really well. Bars held up just fine. Makes a tasty snack.

    I like these. I realized I was out of coconut (dang!) but they were still tasty. I used fat free evaporated milk with a dash of almond flavoring and the flavor was great. The texture was not crumbly, just chewy and delicious. Looking forward to adding some goodies next time! - 3/6/08

    These are fantastic just the way they are. I have also made them with 1 c Fibre 1 with 1 1/4 c rolled oats, a Tbsp flaxmeal, maple syrup adds flavour and is better for us (natural minerals) than sugar or subs, not having almond milk, I subbed lowfat cow's with 1/4 tsp almond extract. - 6/29/09

    I substituted water for the milk and left out the coconut all together. When it was done, they turned out crumbly and kind of soggy. I put them in for about another 20 minutes (until they were actually browned) and when they cooled they were crunchy and didn't fall apart at all! Just what I wanted! - 3/7/08

    These are really good... Added 2T flaxseed meal and 2T wheat bran. Mixed a little extra coconut throughout. Will add more nuts next time, and some sunflower seeds to make the bars more hearty. May just make granola crumble instead of bars because they fall apart a bit anyway. - 9/13/07

    For a gluten free recipe substitute coconut flour for the oats that are ground into flour and use more coconut. Have a dehydrator? Pop it in there to dry for 24 hours. - 6/25/09

    Made it at first as a bar, but found the small size not quite satisfying enough to eat just one. So I broke into crumbles, continued baking until light brown, cooled and added ground flax seeds, put the rest in a bag to top yoghurt or something. Too tempting for the calorie count. - 1/27/10

    have a great texture and are very easy to make. i think the people who added pumpkin seeds were really on to something. next time i'll leave out the coconut and add raisins and pumpkin seeds instead - but it's a great base for your own granola bars. Try them out! - 9/1/09

    Small but very filling. Like others I used regular milke with 1tsp vanilla and one tsp almond. I also substituted the oil for 1 tbsp of natural pb and 1 tbsp natural almond butter - delicious!! I think it could do without the coconut and still be great. - 10/26/09

    Great recipe! Followed the recipe exactly as presented the first time I made these bars - then made them several more time using/substituting a variety of different ingredients (dried fruit, flax seed, wheat germ...). I prefer making my own granola bars - more control over what I'm eating. - 10/7/09

    These are great! They are perfectly chewy and delicious, and very deceivingly filling. I added a few chocolate chips, used 1.5 tbsp of natural peanut butter instead of oil, and threw in a handful of raisins. Forgot to get coconut, but I bet that would be tasty, too.

    These are yummy!!! And anything healthy my husband will eat I am all over it!! I used walnuts (since I get them free) and chopped them in the chopper. I also added the coconut in the mix so it isn't so messy (falls off the bars). I am going to try freezing them. Love the idea of using PB!!! - 11/24/09

    I love this recipe. I did add the raisins, along with whey protein(1/4 cup); and walnuts; substituted Black-Strap molasses for the Maple syrup. This is very healthy and full of protein.

    I just made these this morning and had my first one. Very good flavor, they seemed a little dry to me. I used steel cut quick oats, 1 Tbsp of olive oil (maybe that's why they were a little dry), and like many, just added the coconut into the batter.     Why rolled oats and quck rolled oats. i Guess I am asking out of stupidity. Whal the difference between oats and quick rolled oats in the oucome. I cook Hardlly baked and dont even know which I Have. They are really fine.

    Excellent! Great for a snack or post workout. Adjustments: 1% milk + 1/2 tsp of vanilla. Added 1/4 cup of unsalted sunflower seeds, 1/4 cup of Hershey's Dark Choc. Chips & 1/4 Cherry Craisins. Used a cookie sheet for correct thickness. Be sure to adjust nutrition for additions! - 8/25/13

    We don't care that much for coconut, so I left that out but added mini-chocolate chips to one batch. I also made a batch with Craisens, walnuts and vanilla (instead of the coconut and almonds).     Great start for making granola bars that you and yours will love.
    Mix and match or adjust to your families wants and whats in your pantry. Remember if it is healthy, it also needs to taste great if your family will eat it also.
