Ingredients
-
2 cups rolled oats
1 cup quick-cooking oats
1/2 tsp cinnamon
1/8 tsp salt
1/4 cup raw almonds
1-1.5 Tbsp olive or canola oil
1/3 cup pure maple syrup
1/4 cup honey
1/4 cup vanilla-flavored almond milk
1/4 cup shredded coconut
Non-stick cooking spray
Directions
Preheat oven or toaster oven to 350 degrees F.
Process 2 cups rolled oats in blender or food processor until they become flour-like. Mix "oat flour" with dry ingredients (except coconut) in a bowl.
Add all wet ingredients to the dry mixture and stir until well combined.
Spray a small baking dish (about 5 inches x 12 inches, or similar) with non-stick cooking spray. Add mixture to the dish, pressing it down with a spatula. Sprinkle coconut on top.
With a knife, cut the whole sheet into 12 bars. Bake at 350 degrees for 15-20 minutes. Let cool, cut again, and store in an air-tight container for up to one week.

These were simply delicious. I didn't have any coconut or almond milk, added 1/8 cup brown sugar, 1/4 cup sunflower seeds, 1/4 cup pumpkin seeds and 1/2 cup chocolate chips, 1% milk with 1/2 teaspoon vanilla extract, 1 oz raisins and 5 prunes. Should have left out brown sugar-but overall FANTASTIC! - 7/26/08

I substituted water for the milk and left out the coconut all together. When it was done, they turned out crumbly and kind of soggy. I put them in for about another 20 minutes (until they were actually browned) and when they cooled they were crunchy and didn't fall apart at all! Just what I wanted! - 3/7/08

Great recipe! Followed the recipe exactly as presented the first time I made these bars - then made them several more time using/substituting a variety of different ingredients (dried fruit, flax seed, wheat germ...). I prefer making my own granola bars - more control over what I'm eating. - 10/7/09

These are great! They are perfectly chewy and delicious, and very deceivingly filling. I added a few chocolate chips, used 1.5 tbsp of natural peanut butter instead of oil, and threw in a handful of raisins. Forgot to get coconut, but I bet that would be tasty, too.
No more buying bars for me! =) - 1/5/10

These are yummy!!! And anything healthy my husband will eat I am all over it!! I used walnuts (since I get them free) and chopped them in the chopper. I also added the coconut in the mix so it isn't so messy (falls off the bars). I am going to try freezing them. Love the idea of using PB!!! - 11/24/09

I just made these this morning and had my first one. Very good flavor, they seemed a little dry to me. I used steel cut quick oats, 1 Tbsp of olive oil (maybe that's why they were a little dry), and like many, just added the coconut into the batter. I will have fun playing with this recipe. - 12/29/09

There's a really funny ep. of the Canadian show, Corner Gas, where the Dufus Police Chief & his deputy decide to get healthy & replace their daily doughnuts w/low-fat zucchini muffins. Unfortunately, they're too clever for their own good & decide to enhance the recipe w/ choc chips, butter, etc. - 8/25/10

We don't care that much for coconut, so I left that out but added mini-chocolate chips to one batch. I also made a batch with Craisens, walnuts and vanilla (instead of the coconut and almonds). Used skim milk for both. Both were really good, but I think next time I'll add a bit more cinnamon - 8/23/10
