A tasty twist on boneless pork chops! A tasty twist on boneless pork chops!
Number of Servings: 4

Ingredients

    *4 boneless pork chops (I use 2 butterfly-cut chops, split down the middle to make 4 chops)
    *400 grams red potatoes (8-9 small)
    *5 tbsp extra virgin olive oil
    *1 oz. pkt. Hidden Valley Ranch Dressing & Seasoning Mix
    *3 tbsp diced pimentos
    *onion, sliced, 10 rings
    1/4 cup water

Directions

Preheat oven to 350*
1. Rinse and slice potatoes into bite-size chunks.
2. Mix olive oil and Ranch seasoning packet in a bowl.
3. Dip pork chops in olive oil mix to coat both sides and place in a baking dish.
4. Put potatoes into olive oil mix, shake to coat, and place around pork chops.
5. Place onion rings over the chops and potatoes.
6. Sprinkle pimentos over the top.
7. Add water and cover dish.
8. Bake at 350* for 40 - 45 minutes or until chops are cooked through and potatoes are tender inside. I removed the cover after about 30 minutes to allow the potatoes to get a little crispy.

    I read the comments and decided and decided to slice my potatoes instead of cubing them. I also skipped the oil and made a thin paste with water and ranch mix. I brushed it on both sides of the chops. I mixed a little of the dressing and a butter to toss on the potatos. - 10/14/08

    This was sooo good!I love it b/c I'm a college student and I don't have a ton of time (or money...only a few ingredients!) to waste on preparing food.This took me 15 mins TOPS before baking!I just upped the temp to 375, cooked for 1hr instead of 350 & 45min.I suggest having a side of veggies too! :) - 3/3/10

    I considered the time concerns &chopped my potatoes bite size; added some carrots cut the same size as the potatoes, and since I didn't have any pimemtos added roasted red pepper...It was SO good, the pork chops were moist, pots done. OH, left out 2 tbs oil, because of peppers. YUM :) - 10/9/08

    I would never make this again. It tasted disgusting. It tasted way overseasoned. 40-45 minutes was not enough to cook this at the temperature in the recipe. The potatoes were mushy, even though I removed the foil halfway through cooking. - 3/30/10

    The adults liked this, but my picky kids didn't. That's ok though, it makes just enough so none will waste. It was easy to make, but I had to cook it for about an hour and a half in order for the potatoes to get done. Probably will make again. Makes a good wintertime comfort food. - 2/11/09

    Tried this for the first time. Used some of the other comments as help. Cooked at 350 for an hour and then took off the lid of my dish and cooked for an additional 30 mins. Turned out great. Wife and son loved it and will for sure have it again. Will add more veggies. Fast food for busy life is good - 10/27/15

    This is a definite keeper!! I followed the recipe exactly using boneless pork ribs. In doing so, I needed to adjust the temp and time. I baked on 325 for 2 hours and the potatoes and pork were perfectly tender. Will be making this again, for sure!! I did add a bit of salt and pepper too. - 1/23/15

    Tasty! TIPS: 1. If you use regular, not red, potatoes, pre-cook them for a few minutes in the microwave. 2. Don't add too much water. 3. Use thick, not thin, pork chops. 4. Add some fresh broccoli florets -- they're really good in this dish. - 11/12/13

    My husband and I loved this dish. It is so easy and tastes great! Just make sure the potatoes are cut into small, bite sized chunks and they bake quicker. The pork was very tender and the potatoes were absolutley perfect! Will def have it again soon! - 8/25/08

    It was pretty good my family is picky and only one person ate it so we prolly won't make again.
    I had to up the oven temp to 375 and bake for 1 hour and 20 min and some of the potatoes were still a bit on the crunchy side :) over all a good dish and tasty very easy to make

    This was good, but needed to cook a lot longer than 45 minutes. The pork was not cooked and the potatoes were still hard, even with an oven temp. of 375 instead. I will make it again but adjust the cooking time. - 3/24/08

    This was delicious! You can use any veges--I did a mix of frozen broccoli, cauliflower and carrots, along with the red potatoes.
