I subbed bell peppers for the pimentos. More fiber and love the flavor!
This is a definite keeper!! I followed the recipe exactly using boneless pork ribs. In doing so, I needed to adjust the temp and time. I baked on 325 for 2 hours and the potatoes and pork were perfectly tender. Will be making this again, for sure!! I did add a bit of salt and pepper too.
