Introduction

Serve this black bean salsa known as cowboy caviar at your next potluck. Serve this black bean salsa known as cowboy caviar at your next potluck.
Number of Servings: 24

Ingredients

    2 (15 oz) cans black beans, rinsed
    1 (17 oz) can whole kernel corn, drained
    2 large tomatoes, chopped
    1 large avocado, diced
    1/2 red onion, chopped
    1/4 cup chopped fresh cilantro

    Dressing
    1 Tbsp red wine vinegar
    3-4 Tbsp lime juice
    2 Tbsp olive oil
    1 tsp salt
    1/2 tsp pepper

Directions

1. Combine all ingredients in a large bowl.
2. Cover and chill.
3. Garnish with avocado slices or cilantro sprigs.
4. Serve with tortilla chips.

    I added just a touch of sugar (about a teaspoon) to take the sharp edge off. One serving is about 3 ounces, which fills about seven baked tortilla scoops. Baked scoops are 10 calories each, so one scoop FULL of cowboy caviar is only 20 calories! - 11/25/07

    This is a great recipe! I made it for a bbq and I got a ton of comments on how good it is. The second time I made it I put all the ingredients together except for the avocado and stored it in the fridge over night so all the flavors melded together. Add avocado right before serving.     I LOVE this recipe!! Colorful and flavorful and a unanimous hit. I add a couple diced peppers for spice as it's otherwise pretty mild, & omit the oil & add extra lime juice. Also good on hot dogs, salads, etc... omit the avocado and it will keep longer, but you're missing a whole layer of flavor! :) - 6/5/07

    You definitely don't need the oil...I'm from Texas- so adding the cumin, garlic & pepper was great--to keep it kid friendly...I didn't add jalapeno pepper- BUT you could! DELISH - 7/17/09

    The olive oil isn't necessary and neither is the vinegar with the addition of more lime juice and I added cumin to kick it up a notch. My most requested recipe! And the baked Scoops are essential for parties. - 5/27/08

    I just made this and have only tasted it from the taste testing as I went along, but it's delicious. I added in some chopped red pepper, and used parsley instead of cilantro. I halved the oil for fewer calories. Can't wait to serve! - 3/1/09

    excellent!, I added jalapanos and put them in toasted tortilla cups (micro 20 sec, fit inside corelle bowl and bake at 350 for 10 min) and used the left overs to make quesidillas, just added some cheese as binding. YUM - 9/11/08

    I have a similar recipe I love. It uses balsamic vinegar instead of red wine. Otherwise it's identical to this recipe. Rinse canned beans, heat them in the microwave, and rinse them again to reduce the salt in them by up to 1/3.
    I serve this at parties and it's always completely gone at the end.

    A friend of mine makes this but adds finely chopped hard boiled egg, fat free cream cheese and leaves out the tomatoes. The cream cheesa is beaten to make very creamy, and the chopped egg is placed around the border of the serving plate. - 9/30/08

    loved this!! I added cumin to it (or you could add one of those "taco seasoning" packets) and I put the Cowboy Caviar over some wild rice. SO AWESOME!     I make something similiar: 1 can pinto beans, 1 can black beans or whatever beans, 1 can hominy, onion, 1 can diced tomatoes with hot peppers(or 1can diced tomatoes and 1or2 serrano peppers) about 3 tbspns Italian dressing...let sit overnight in fridge. - 9/22/10

    This is a staple at my house. Instead of fresh tomatoes, I use diced w/green chiles. For the dressing, I use a light balsamic vinaigrette. Saves a little time.

    I also drain and rinse all the canned veggies before mixing them.

    Best foods has a recipe (Black bean and corn salsa) on their website that's very similar to this one it just doesn't t have the vineger or the olive oil. I've been using for quite sometime, it's very good and quite the crowd pleaser.

    I just made this for a party tomorrow. I have not tasted it after it marinades but the tiny bit I tasted was mmgood.
    My 18 year old daughter did the actual taste testing. I filled a couple of "scoop" chips with this "caviar" and she loved the presentation, and ate all that was on the plate.
