Ingredients

2 (15 oz) cans black beans, rinsed
1 (17 oz) can whole kernel corn, drained
2 large tomatoes, chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup chopped fresh cilantro
Dressing
1 Tbsp red wine vinegar
3-4 Tbsp lime juice
2 Tbsp olive oil
1 tsp salt
1/2 tsp pepper
Directions
1. Combine all ingredients in a large bowl.
2. Cover and chill.
3. Garnish with avocado slices or cilantro sprigs.
4. Serve with tortilla chips.

This is a great recipe! I made it for a bbq and I got a ton of comments on how good it is. The second time I made it I put all the ingredients together except for the avocado and stored it in the fridge over night so all the flavors melded together. Add avocado right before serving. I LOVE this recipe!! Colorful and flavorful and a unanimous hit. I add a couple diced peppers for spice as it's otherwise pretty mild, & omit the oil & add extra lime juice. Also good on hot dogs, salads, etc... omit the avocado and it will keep longer, but you're missing a whole layer of flavor! :) - 6/5/07

I have a similar recipe I love. It uses balsamic vinegar instead of red wine. Otherwise it's identical to this recipe. Rinse canned beans, heat them in the microwave, and rinse them again to reduce the salt in them by up to 1/3.
I serve this at parties and it's always completely gone at the end. - 9/21/10

Best foods has a recipe (Black bean and corn salsa) on their website that's very similar to this one it just doesn't t have the vineger or the olive oil. I've been using for quite sometime, it's very good and quite the crowd pleaser. - 12/16/09

I just made this for a party tomorrow. I have not tasted it after it marinades but the tiny bit I tasted was mmgood.
My 18 year old daughter did the actual taste testing. I filled a couple of "scoop" chips with this "caviar" and she loved the presentation, and ate all that was on the plate. - 10/23/09
