Delicious meal the whole family will love. you can bake without crust, or use potato slices for crust.
Although I call this Quiche, it is not as soft and "squishy" as quiche. It more closely resembles greek spinach pie.

Ingredients

    8 oz Great Value, Low-moisture Part Skim Mozzarella Cheese
    10 oz Spinach chopped frozen 10 oz (by 11CAROLE)
    9 tbsp All Whites Liquid Egg White (3 Tbsp=1 large egg's white)
    2 large Egg, fresh, whole, raw
    2 tbsp Basil
    .25 cup chopped green onion tops (by LAST_TIME_OUT)
    1 tbsp Garlic, prepared chopped garlic (Canada Garlic Inc) (by MOMMAMORGANA)
    .25 cup Parmesan Cheese, grated
    2 oz Athenos Natural Fetta Cheese (by MICKI373)
    8 oz Shrimp, cooked
    .25 cup (8 fl oz) Yogurt, plain, low fat
    1 crust, single 9" Pie crust, frozen, ready-to-bake

Tips

It is important to make sure you squeeze as much moisture as possible from the spinach, and drain the shrimp well to reduce total liquid volume in this recipe, or the finished product may be too mushy.


Directions

Pre heat oven to 375.
Thaw spinach and drain and squeeze out as much moisture as possible.
Chop fresh basil and green onions.
Saute shrimp cooking off as much excess moisture as possible
In a medium mixing bowl beat together 3 egg whites and 2 whole eggs
Mix in yogurt, then 3/4 cup shredded Mozzarella cheese, 1 tbsp parmesan cheese and all of the feta cheese.
Add spinach, basil, onions, and garlic. Mix well
Add shrimp. Mix well.
Pour into frozen pie crust, and top with remaining cheese.
Bake at 375 until top is golden brown. about 40 minutes.

    This is a great recipe easy to make and I did not use a crust put it in a glass pie pan it turned out great try it you will love it. - 1/29/17

    This was excellent! I sauteed fresh spinach, added fresh minced garlic while cooking the shrimp and used 1/2 cup sour cream because the dog ate the yogurt that was on the counter. Jalapeno yogurt I might add. - 3/27/16

    I'd make this crustless also so that it's easier and less carbs but sounds great! - 11/23/17
