Introduction

Number of Servings: 8

Ingredients

    3 large diced tomatoes
    1 diced medium sized onion
    1/4 bunch of cilantro (use more or less depending on your taste)
    juice of half a lemon
    1/2 teaspoon of minced garlic
    1 tsp of salt
    2 jalapenos (or more if you prefer it hotter)

    Optional ingredients (not included in nutrition facts)
    half a cucumber, peeled and diced
    1 avocado, peeled and diced

Directions

1. Wash tomatoes and cilantro.
2. Dice tomatoes, onions, chop cilantro, jalapenos, and the optional ingredients (avocado, cucumber)
3. Put ingredients in a bowl.
4. Add salt, garlic, the juice of half a lemon. Mix it up and serve.

* you can roast your tomatoes for great flavor.
heat up a frying pan or skillet on medium high heat. Place whole tomatoes in the cookware and toast the outside of it until the skin begins to break and split apart. remove from heat and continue with step two.

note if you prefer smooth salsa as opposed to chunky just put all this good stuff in the blender.

    Salsa/Pico recipes like this are also surprisingly good using diced canned tomatoes. If you haven't tried this trust me it will taste nearly as good as fresh. I frequently add green peppers for a more trad salsa. Lime/or Lemon juice is key as it makes it taste brighter. - 6/18/08

    This is absolutely fantastic!! I made for a football snack yesterday. My husband & middle son were hooked immediately! I will make this again!
    Makes an excellent non-spicy dip by substituting 1/4 bell peppers for the jalapenos if you have people who can't eat spicy food at all like my Mum! ;p

    This is similar to a recipe I use all the time. I leave out the jalepeno and use about 4 times the garlic! That gives it plenty of zing. Awesome with tacos. Also great mixed with a pouch of tuna for a low-cal and very tasty tuna salad. - 5/12/08

    Cilantro/Coriander....the leaves are cilantro, the seeds of the cilantro plant are coriander....similar but stronger taste, especially when ground. Great recipe !! - 8/10/09

    When I make this I sometimes add variety by adding any of the following: can of black beans, leftover corn removed from the cob, green and red peppers, lime juice, a little cumin, extra garlic, chopped mango or peaches is also a great addition! - 9/8/09

    I love making this with lime juice instead of lemon, and tossing some minced serrano peppers with the jalapenos. The serranos are smaller than jalapenos, usually right beside them in the produce section, and they're a bit spicier and have a great flavor! - 6/3/08

    I added this recipe to my collection a week ago and i just tried it. It was so easy to make and delicious. I made a slight modification: i added a bunch of coriander instead of cilantro (very aromatic), avocado (great addition). on a whole wheat tortilla with 1oz provolone and bbq sauce, delish! - 1/23/09

    ooh baby, i loved this recipe and i was surprised that it made a ton! [i didn't measure but it seemed to make atleast 2 qts worth]. anyways--i added more cilantro and garlic and only used a couple of grinds from the sea salt grinder that i have instead of 1 tsp. loved this salsa!!!! =) - 5/4/08

    A favorite in our house! I use lime instead of lemon and prefer when I have red onion over yellow or sweet. I will have to try roasting the tomatoes next time, and maybe the jalapeno, too!

    So fantastic! Changes I made: instead of 1/2 a lemon, I used juice from 1/2 a lime; instead of fresh cilantro, I used dried and just sprinkled and tasted until it was right; used more salt than listed; added 1/2 a habanero pepper.     just found TOMATILLO's at the farmers market (was not sure what they were...they suggested for salsa, etc.) and have started adding them to my recipe...GREAT ADDITION!

    I've been looking for something new with my chicken. I also added the Fiesta Lime Mrs. Dash spice to this....yummy!!! Gave it just a lil more bite, as hubby doesn't care for jalapeno's....I also used that spice on my stir fry vege's.

    We LOVE pico on everything. Especially tilapia. I just read somewhere that the lycopene in tomatoes that are canned...like in juice, and diced tomatoes...is actually more easily released, making tomatoes one of those foods that is actually GOOD for you, canned. How amazing is that? - 9/8/09

    This is the same recipe I use. I LOVE homemade pico, so delicious and fresh! Throw in some sour cream and avacados and you have guacamole! I'm going to try it using the canned diced tomatoes that someone suggested too. - 9/8/09

    This is wonderful as is, but I always use 1 whole lime and a variety of peppers from my garden. Removing the seeds and membranes just leaves the wonderful flavor of the peppers without the rip your tongue out heat. Also like to add cumin and celery salt.     oh yes and I also make this, I change it up sometimes and add additional peppers to it, go down my store shelf and pick out about 5 different kinds and add to it as well. Of course I make 1/2 gallon at a time. It keeps in the fridge really well. I also squeeze in a few limes instead of lemon. - 9/8/09

    I made this using tinned tomatoes, a red onion and Tabasco sauce (along with the other ingredients), as that's what I had in the house. It was a little bit thin - I probably should have strained the tomatoes a little - but it was wonderfully fresh and vibrant. I'll definitely make this again. - 12/24/09

    I am allergic to all peppers, so I just omit them. This recipe is similar to my sister-in-law's recipe. She adds some radishes, finely chopped, green onions sliced thin, and celery finely chopped as well as using lime juice as well. - 12/23/09

    Love this recipe. I use different hot peppers depending on who will eat it. Habanero for the (very) spicy crowd, poblano or serano for the non spicy. If you like it really mild, cut out the ribs and seeds from the pepper as it contains most of the heat. Enjoy :) - 12/23/09
