Take the jumbo olives and cut a slit from top to bottom on one side. Pipe about 1 teaspoon of cream cheese into each olive. If you have softened the cream cheese you can use a pastery bag or a plastic bag with a hole in it to do the piping.
Cut the carrot into 1/8" rounds and cut a small triangular notch out of each- set it aside to use later.
Assembly- Set one on the cream cheese filled olives on end on top of a carrot round with the notch to the front to form the feet. Set a small olive on top of the large olive for the head and secure all to the carrot with a toothpick. Make a small horizontal cut in the front ofthe small olive and insert the small triangle of carrot to form the beak.
You can dress them up with scarves made of roasted red pepper strips. Also try different cream cheeses like chives for a great flavor.
