Introduction

Ingredients

    4 (4 ounce) fillets salmon, skin removed
    1 cup chopped fresh tomato
    1/2 Hass avocado, chopped
    1 garlic clove, crushed
    1 Tbsp balsamic vinegar
    1 tsp olive oil
    1/2 cup cooked corn kernels
    1/4 cup minced red onion
    1/4 cup chopped fresh cilantro
    salt and pepper, to taste
    1 lime, cut in wedges

Directions

1. Preheat oven to 325 degrees.

2. Combine all ingredients (except salmon fillets and lime) in small bowl and refrigerate for 30 minutes.

3. Bake salmon for 15-20 minutes, or until cooked thoroughly.

4. Serve salmon surrounded by the salsa and lime wedges.

Can serve salmon either hot or cool --

Serving cool salmon with salsa is a great summer recipe; just refrigerate until cool

    Great recipe!
    When baking salmon you should always sear the fish to lock the pores and keep nutrients and juices inside while baking.

    Step 2b) Heat a pan on high heat, drop fish in pan on each side for 15-20 seconds to seal pores. Then bake. use a spray of oil if your pan isn't 100% non-stick!

    This was amazing, even in the winter! ;) My bf and I both enjoyed this very much--he even THANKED me after he'd finished eating! For the record, 1 medium tomato = approx. 1 cup diced, 1/4 medium red onion = approx. 1/4 cup chopped, and one handful of cilantro = approx. 1/4 cup chopped. - 1/11/10

    To make this a true summer recipe, instead of turning on the oven, place in the microwave with a cover on it. I usually cook on high for 1 minute and then on 50% for 5 or 6 minutes. - 7/17/09

    Fabulous! I just cooked the salmon plain because I love the taste of the fish itself, and it paired wonderfully with the salsa. I was out of corn, so I just subbed double tomatoes, onions and cilantro, and added a splash of lime juice. The citrus helps the avocado keep for leftover portions. - 5/20/10

    I cook a lot of Salmon, cod and a few other varieties of fish and shrimp. When not sure how cook it simple pour a can of Rotel chili tomatoes over it or your favorite store brand or homemade salsa. Make a light grave, using coffee as your liquid, adding a touch of any salsa to it to spice it up. - 7/18/09

    I made this for my daughters family. Everyone loved it, including the 10 month old. I am going to make it again for my parents, my mom does not like salmon so I am going to make Turkey tips with it as well. I think the salsa will go with a white meat. The salsa makes the dish! - 6/21/21
