Ingredients

    Tofu, extra firm, 1 brick
    1 cup dried shiitake mushrooms
    1 can button mushrooms & pieces
    1 bundle straw mushrooms
    1 large onion, chopped
    1/4 cup soy sauce
    1 Tbsp olive oil
    1 Tsp white pepper (to taste)
    1/4 cup rice vinegar (or to taste)
    2-3 tbsp hot chili sauce (to taste)

Directions

Soak the dried mushrooms in some broth and soy sauce.

Saute the onions in the olive oil while the mushrooms soak. Then when onions are clear, add all ingredients to the pot and simmer for 45 minutes until the mushrooms are tender.

    You don't specify how much beef broth you are suppossed to use, you dont show it on your ingrediant list. 10 cups? thats what i would assume since it says 1.25 cups per serving in the nutritional breakdown. - 11/5/09

    This is absolutely my favorite soup and have gone to Chinese restaurants to get just this soup. This recipe is awesome! I added 3 cloves of crushed garlic and some shrimp and it was perfect! My husband loved it. I'll be making this often. - 11/2/08

    I made this tonight-it was awesome! I had to change a few thing as in my little mid-western town we didn't have things like dried shiitake mushrooms, straw mushrooms. I did find canned varieties of these & used those (rinsed). The recipe doesn't specify how much broth - I used 8 cups of low sodium - 6/29/14

    This recipe has potential but if I make it again I will be tweaking it a bit, maybe adding more veggies.

    WOW! This was so good! It wasn't over poweringly hot but it still had it's kick! So good even on this very hot day! I did the same as the pervious person, and did low sodium soy sauce. It was great! Definate make again! - 5/16/08
