Ingredients

1 cup dry brown rice (long grain)
2.5 cups chicken broth, 99% fat free, 50% less sodium (Substitute low sodium vegetable broth to make this vegetarian)
    3 cloves garlic
    1 lb frozen broccoli
8 oz Velveeta, cut into small cubes

Directions

Bring broth to boil. Mince garlic cloves and add to broth. Add brown rice and stir once. Cover, reduce heat and simmer for 45 minutes until tender.
(Don't peek at rice while it simmers!)
While rice is cooking, thaw broccoli. Chop broccoli finely and set aside.
Add cubed Velveeta and chopped broccoli to hot, cooked rice. Stir to completely combine. (Most of the cheese should melt.)
Scoop rice mixture into a small, ungreased casserole dish and spread evenly.
Bake uncovered in 400 degree oven for 15 minutes.
Makes 10 half-cup servings.

Had this for dinner last night with sauted diced red bell pepper and sweet onion added. Used 2% cheddar instead of Velveeta. It was great and look forward to using the recipe as a jumping off point for lots of variations. Thanks. - 2/12/10

This was delicious! One of the best parts was that my family didn't realize that it was brown rice (they don't like brown, and I'm very picky with how I like it). Substituted mild shredded cheddar for the Velveeta. - 7/16/08

I was hesitant because I'm not huge brocolli fan, but I used the California Blend (Brocolli, Cauliflower, and carrots) I love love it! Can't wait to share with my friends! - 9/19/10

I think this was very good. I have always liked this type of casserole. I did use the 2% Velveeta. I had a hard time keeping it to one serving though. (but did) - 10/13/09

I'll leave out the garlic, use real 2% sharp chedder and fresh broccoli, and add grilled boneless skinnless chicken breast. - 12/13/08

I made this tonight for my family and added two poached chicken breasts to it to make it a more complete meal. Everyone in my family (two year olds included!) enjoyed it, even though my hubs added more Velveeta to his. I have to admit, it could be cheesier, but then it would be higher in calories! - 1/12/11

I will make this again. Mine is variation using ingrediants on hand: Added chopped onion and carrots to get a few more veggies into my meal. Used shredded cheddar and added some of the chicken broth boiling liquid as I had no Velveeta. - 7/18/10

The chicken broth is to cook the brown rice.

This recipe sounds soooo good. It would be great alongside some roasted chicken. I can't wait to try it out!
