Ingredients

    1 (8oz) can pineapple chunks in juice
    1 tsp. cornstarch
    1 tbsp. low-sodium soy sauce
    1/2 tsp garlic powder
    Cooking Spray
    2 tsp sesame or olive oil
    1 green bell pepper, coarsely chopped
    1/2 onion, sliced
    3/4 lb. peeled and deveined fresh shrimp

Directions

Drain pineapple, reserving juice; set pineapple chunks aside. Combine reserved juice, cornstarch soy sauce and garlic powder; set aside.
Coat a large nonstick skillet or wok with cooking spray, and add oil. Place over medium-high heat until hot. Add green pepper and onion; stir-fry 2-3 minutes or until crisp-tender. Add shrimp; stir-fry 2-3 minutes or until shrimp turn pink.
Stir cornstarch mixture and pineaple chunks into shrimp mixture. Cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Serve immediately.

    I can't have pineapple so substituted red and yellow bell pepper for color. I used maraschino cherry juice for the pineapple juice and the cherries for the pineapple. - 8/4/20

    Incredible!
    My version of this recipe calls for 3 Tablespoons of chili sauce for a little kick. I make this on a regular basis. Yum! - 8/5/09

    This was real good! Only changes I made was to add a shredded carrot. Probably won't do that next time.. adds a different flavor I didn't like. But it was GOOD! May put a splash of red pepper flake in next time for a little heat. YUM! - 6/2/09
