Introduction

Ingredients

    2 cups sugar
    3 cups whole wheat flour
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. baking soda
    1/2 TB baking powder
    2 eggs
    2 tsp. vanilla
    1 cup applesauce, unsweetened
    2 TB vegetable oil
    2 cups shredded zucchini

Directions

Make 2 loaves (24 slices)

Preheat oven to 350. Spray loaf pans with Pam and lightly flour. Mix together sugar, flour, salt, cinnamon, soda and baking powder. Add remaining ingredients. Bake about 50. Check it after 40 minutes.

    I didn't have any applesauce, so I added another cup of zucchini and 1/4 cup of oil. It was delicious!!! Best zucchini bread I've had in a long time!! - 2/17/10

    Amazing! My 4 kids plus the kids at my in-home daycare all loved this bread. And I love that I can sneak in whole wheat and they don't suspect a thing! Moist and flavorful. Definite keeper. - 9/30/10

    This was great. It's a heavy bread, but very tasty and extremely moist with the applesauce. The kids and my husband love it. It's the perfect way to use up all the extra zuchinni growing in the garden. - 9/5/09

    Incredible!
    It's in the oven right now. I added 1 tbsp of flaxseed and omitted 1 tbsp of oil. I also added a little maple flavoring. It was moist and delicious. Thumbs up from the 10 year old, who has never had it. I made mine into 3 loaves. It comes out to about 91 calories a slice. 12 slices a loaf. - 8/1/09
