Introduction

Ingredients

    1 chilled cucumber
    1 avocado
    2 scallions, chopped
    1/4 cup mint leaves, chopped (can be left out)
    1/2 cup well-shaken buttermilk
    1 1/2 cups cold water
    salt and pepper to taste

Directions

1) Cut cucumber into 3 equal pieces, then coarsely chop 2 of the cucumber pieces. Coarsely chop half of the avocado.

2) Blend together the chopped cucumber and avocado and the mint leaves, scallions, buttermilk, and water until smooth. Taste and season with salt and pepper as needed.

3) Chill soup, uncovered, 15 minutes.

4) Cut remaining cucumber and avocado in 1/4 inch pieces and stir into soup.

    Made this w/o the mint and substituted Greek plain non-fat yogurt for the buttermilk which made it a bit thicker & creamier. I'll be making this quite often throughout the summer months. - 5/24/09

    This sounds delicious! Can't wait to try it. Mint, cucumber, and avocado are some of my favorite things.

    Note for the people who can't keep buttermilk on hand -- you can approximate buttermilk by adding 1 tbsp of vinegar or lemon juice per cup of regular milk and letting them sit 10 minutes.

    I am on a limited food budget so all things I buy must be used fully. I could not find enough ways to use the butter milk to justify buying it. I substituted one fourth cup sour cream low fat and one fourth cup plain yogurt It was great Thanks for posting the recipe - 5/24/09

    Better without the avocado in my book -- have been making this for years and years with just home made yoghurt, mint, cukes, and garlic. Wonderful for summer dining. OH, and forgot, use chicken broth instead of water fo goodness sake!!! - 6/16/10

    I'm glad to see that this has so many good reviews... I think I will be trying it this summer... I am one who doesn't buy buttermilk and will just make my own - 1 tablespoon lemon juice added to low-fat milk to make 1 cup... very easy, cuts calories and fat, and it is always available :) - 6/24/10

    This recipe was delish with buttermilk, but tonight I made it again with 1/4 C FF Greek yogurt mixed with skim milk and juice of a small lemon to make about 3/4 cup - then added water to equal 2 C liquid. Both times I made this I added one small clove of garlic mashed w/ salt. OMG! SO good! - 6/24/12

    Just bought avocado cucumber and greek yogurt at the store this morning, ... I'm taking CrazyGracy's suggestion and trying out this recipe in the next couple of days. No scallions, but I've got chives growing in my garden. Sounds very refreshing--and healthy. - 6/24/12

    I loved this soup! I substituted lowfat greek yogurt for the buttermilk and cilantro for mint, and the result was wonderfully light and refreshing. I only used about a half cup of water and it was a bit thick but exactly as I wanted it. Will definitely make again! - 5/8/12

    I'm afraid I didn't enjoy this at all. I happen to love all the ingredients separately and was excited to try them together in this recipe.     Regarding having extra buttermilk, I think you can freeze it. If you like this recipe and want to make it several times over the next few months, freeze the remainder in 1/2 cup amounts in plastic bags. - 6/24/11

    I made a few changes to suit my taste in spices and this was really good. I added cayenne pepper, paprika, and garlic powder for a little "bite". Also I substituted far free plain yogert and skim milk for the buttermilk. I really enjoyed it and plan to make it again soon. - 7/2/10

    I used only 1 cup water and added a clove of garlic. It turned out great! It does need an acid though to counteract the smoothness of the avocado and cucumber.     Sounds great. I just bought a load of very small Kirby cucumbers, which I find have a more delicate, brighter, fresher flavor than the large, smooth-skinned ones. I'm not a fan of mint and rather press a small clove of garlic instead. I'll think of an other herb garnish. - 6/25/10
