Introduction

Ingredients

    Citrus vinaigrette:
    • 4 tablespoons fresh orange juice
    • 2 teaspoons olive oil
    • 2 teaspoons honey
    • 1 1/4 teaspoons Dijon-style mustard
    Salad:
    • 4 small skinless, boneless chicken breast halves (12 ounces)
    • 4 cups torn mixed salad greens
    • 2 medium oranges, peeled and sectioned
    • 8-12 strawberries

Directions

1. To make the vinaigrette: In a small bowl combine the orange juice, oil, honey, and mustard. Set aside.



2. To make the salad: Place the chicken on a grill rack over medium-hot coals. Grill, uncovered for 6 minutes. Turn the chicken and grill for 6-9 minutes more or until the chicken is tender and no longer pink inside.



3. In a large bowl, toss mixed greens and oranges.



4. Arrange the greens mixture on 4 salad plates. Place a sliced chicken breast on each plate. Drizzle with vinaigrette. Garnish with sliced strawberries.



Serves 4.

    Very good salad. I also make this with Pears, when Strawberries are out of season. Add some blue cheese shavings and some roasted sliced almonds for variety. Not only is it a great tasting salad, it looks exceptional too. - 11/23/08
