Ingredients

    8 cups chopped apples, de-skinned

    1 cup white sugar

    1 cup whole grain flour

    1 cup all purpose flour

    2 teaspoons baking soda

    2 teaspoons ground cinnamon

    1 teaspoon salt

    1/4 cup olive oil

    2 eggs, beaten

    2 teaspoons vanilla extract

    1 cup walnuts, chopped (optional)

Directions

1) Preheat oven to 350 degrees F (175 degrees C). grease and flour a 9x13 inch pan. in a large bowl stir together the sugar and the apples, set aside. sift together the flour, baking soda, cinnamon and salt.

2) In a large bowl stir together oil, eggs, and vanilla. add the apples and sugar and mix well. stir in the dry ingredients, (then nuts if so desired). pour into the prepared pan and spread evenly.

3) Bake in the preheated oven for 45 minutes or until cake springs to the touch.

    delicious!!!

    i substituted splenda for the sugar and unsweetened applesauce for the oil to cut back on the cals. turned out very moist. my mom and i split a piece right out of the oven and yummmmmm. i will definitely make this again!!!

    Yum! I was able to reduce calories to 170 for 1/12 by substituting Splenda sugar blend for sugar, applesauce for oil, and Eggbeaters for eggs. Turned out great! - 3/18/09

    I made the substitutions that everyone else did to reduce calories but ended up somehow getting a very dry batter so I added some vanilla soymilk and it turned out pretty tasty but slightly doughy. Pretty good overall. - 6/8/09

    Superb !! Delicious ... Substituted sugar with sweetner and applesauce for oil but couldnt get any substitute for eggs so I replaced with pinapple sauce, tasted just great, moist and melted in the mouth. Got to make that again !!
