Ingredients

    3 Boneless Skinless Chicken Breasts
    1 can (14.5 oz) Del Monte Petite Cut Diced Tomatoes
    1 tsp Garlic, minced
    1 medium Scallion, diced
    4 oz Baby Portabella Mushrooms, sliced
    Salt
    Pepper
    Olive Oil Cooking Spray

Directions

Spray a skillet with cooking spray and heat over medium heat. Add garlic and scallions and saute. Pierce chicken with a fork several times, place in skillet, sprinkle with a dash of salt and pepper, and brown on one side.

Flip the chicken and pour entire can of diced tomatoes on top. Add mushrooms and simmer over medium heat for about 15 minutes.

Reduce heat and continue to simmer for another 20-30 minutes or until chicken is cooked through. (The longer it simmers, the more flavor will be absorbed into the chicken.)

Additional meal ideas: Serve over brown rice or whole wheat pasta. Or, add different types of vegetables, like broccoli, zuchinni, squash, etc.

    I used 3 chopped fresh tomatoes instead of canned. Added Italian seasoning for more flavor, and topped with a little feta cheese just before serving. My picky family loved it and I'll make this often. Thanks for the recipe! - 7/31/08

    Love the recipe - recalculated for NO SALT ADDED tomatoes because sodium is very high if you use regular, canned tomatoes. Also, for some reason my calories count came out way lower - maybe because I use less meat? Thanks! - 1/23/10

    I made this using pork chops instead of the chicken and a big can of tomatoes and mushroom pieces and stems since that's what I had. Very good. My family loved it. - 7/31/08

    I like it, but it helped to cut thin pieces of chicken to lessen the cooking time. I also used "Italian style" tomatoes to give a little more flavor. I will make this often. - 7/22/08

    This was excellent. I added green beans, broccoli, okra and some fava beans, and mistakenly a BIG can of tomatoes (26 oz) instead of the small, but it still was delicious. I'll definitely be adding this into the rotation. I can't wait to eat the leftovers for lunch today! - 7/17/08
