Introduction

Cubed yams and sliced onions are tossed in olive oil and cumin and baked for a delicious side dish. Cubed yams and sliced onions are tossed in olive oil and cumin and baked for a delicious side dish.

Ingredients

    2 medium yams, cubed (gave me about 3 c)
    1 large onion, sliced into strips (I used Vidalia)
    2 T olive oil
    1 tsp. ground cumin
    salt and pepper to taste

Directions

Heat oven to 350 degrees.

In a large bowl, toss all ingredients together and stir to coat yams and onions with oil and spices.

Put mixture in baking dish. Place in oven and bake until potatoes are soft when poked with a fork, stirring occasionally. Approximately 1 hour.

Makes approximately four one-cup servings.

    I was looking for a recipe for yams that didn't have all the sugary additives to it. Well, I found it! This recipe is simple and the results are fantastic! The cumin and onions do some magic with the yams and really enhances their flavor and natural sweetness. Very Tasty! Thank you for sharing - 6/1/12

    This was absolutely delicious! My husband doesn't like cumin, but I love it. This recipe makes it worth making a separate side dish for him. I think it would be a good main dish also. Thanks for sharing. - 10/26/10

    Thank you so much! Glad you enjoy it. I haven't made this for a while, but I'm going to have to soon. I'm betting it would be good with butternut squash too, and last time, I threw in some carrots. Yum!
