My Husband's favorite, very filling! My Husband's favorite, very filling!
Number of Servings: 2

Ingredients

    1/2 cup onions, chopped
    1 cup tomatoes chopped, with juice
    3 cloves garlic
    4 medium corn tortillas
    4 large eggs
    1 tsp olive oil
    1 tsp chili powder
    1 jalapeno pepper, diced
    1/2 cup cheddar cheese

Directions

Saute onions, garlic, pepper and chili powder in 1 tsp oil for 2-3 minutes. Add tomatoes with their juices (Sometimes I add tomato sauce). Warm tortillas in pan. Fry or poach eggs. Put eggs on tortillas and cover with boiling sauce. Cheese topping is optional, tastes good either way. Makes 2 servings of two tortillas and two eggs with sauce.

    I love these... Use different kinds of diced tomatoes (with green chiles or fire roasted), and warm up some black beans spiced with cumin and/or chili powder to add beside the eggs on the tortillas. Not particularly low-cal, but makes for a yummy and filling dinner. - 7/9/09

    Looks yummy--I love eggs! I'd probably use lo-fat cheese to cut the fat calories though. - 7/25/08
