Ingredients

    3 eggs
    1/2 cup canola oil
    2 cups sugar
    1/2 cup applesauce, unsweetened
    3 cups grated zucchini, mostly drained
    2 tsp vanilla extract
    3 cups flour
    3 tsp cinnamon
    1 tsp baking soda
    1/4 tsp baking powder
    1 tsp sea salt
    1/2 tsp nutmeg
    1/2 cup chopped walnuts

Directions

*Preheat oven to 325 degrees F. Grease & flour two 9 x 5 inch loaf pans.
*In a large bowl, beat eggs until light and frothy. Mix in oil, applesauce and sugar. Stir in zucchini and vanilla. In a medium bowl, combine flour, cinnamon, baking powder & soda, salt, nutmeg and walnuts. Stir into the egg mixture. Divide batter into prepared pans.
*Bake for 60-70 minutes or until done.

MAKES 2 9X5 INCH LOAVES. Total servings per loaf, 24, 1/2 inch thick slices. Calorie count per serving without crunchy topping, 97.5. With, 117.2

    Yumm is all that needs to be said. My first time making Zuchini bread and this was great. Was going to try the crunchy way but forgot and after making this there is no need it was perfect the way it was. - 10/13/08

    Awesome Recipe. I did make a few changes by using wheat flower, pecans instead of walnuts and due to no nutmeg used allspice instead. :) I didn't have all the goodies to make the topping so I just sprinkled a little brown sugar on top. - 6/28/10

    This was awesome! Made this on Saturday and it is already all gone, with requests to make more! Love the spice in it. Made without walnuts because I am allergic, but didn't feel like anything was missing. The added topping was yummy too. Think next time I will try adding apple in place of walnuts. - 2/9/10

    Delicious! I like the cinnamon flavor and the crunchy topping was a nice addition. It was very moist following the recipe exactly. I used 3 small loaf pans and only had to bake it for 60 minutes. I'll definitely make this again. I just hope I can eat it in "moderation" because it is soooo good! - 8/5/09
