Introduction

My Gramma Willie taught me how to make this sauce years ago. It's the only way I make Alfredo now (though I use unsweetened soy milk instead of skim milk). Ingredients

    1 c light (Neufchatel) cream cheese
    1/2 c grated Parmesan
    1 1/2 c skim milk
    1 T garlic powder, jarred garlic, or 1 large clove, chopped

Directions

Heat milk, garlic and cream cheese over medium heat, mixing well. Add parmesan cheese once the mixture is creamy. Serve over pasta with broccoli and grilled chicken. (Those calories not included.)

    This is so incredibly easy and tasty! I use 1/2c half-n-half and 1 cup almond milk, add black pepper and just a dash of nutmeg. IMO, best served over fettuccine w/ broccoli, mushroom, and/or green peas. DELISH!!! - 9/30/09

    Very easy and pretty good. Mine was a tiny bit bitter (I can't think of a better way to describe it)...I think it was the type of cream cheese I used. Good for a quick, easy dinner. I added pepper and extra fresh garlic. Would make again if I needed to use up the ingredients, like this time! - 7/24/10

    Often wondered what "alfredo" is. Now I know - a cheese sauce that's not quite a properly cheesy sauce. I make a savoury white sauce. A basic white sauce, and add either mustard powder to the thickening agent, or coarse grain mustard - plus herbs & seasonings. Keep cheese as protein in other meals. - 2/2/10

    I must have done something wrong, because it was way too "cream cheesy" for me. I ended up having to toss it and go buy some jarred. Wasn't as healthy, but I was able to eat it. Sorry, this just wasn't for me. - 9/6/09

    I liked it! I think next time I will add a little more milk to make it more creamy but all in all it was a quick, and tasty meal. I served it over noodles with cut up chicken and broccoli - 6/8/09
