Introduction

This is set up for dried beans. To use canned beans use 3.5 cups of kidney beans and 3.5 cups garbanzo beans.

I only need to feed me and my husband, so I end up with days worth of left overs. My favorite thing to do with the left overs is to put them in an ovenproof dish and directly cover with cornbread dough, then bake according to the box.

Ingredients

    1.2 cups dried garbanzo beans
    1.2 cups dried kidney beans
    1 pkt chili seasoning
    1 can diced tomatoes
    1 can diced tomatoes w/green chilies
    2 tsp cumin*
    1 tsp cayenne*
    1 tsp powdered veg. broth*

Directions

Night Before: Rinse beans. Soak beans overnight with 3 parts water [NO SALT].

Day Of: Boil then simmer beans with 3 parts water for about 1 hour, and check to make sure there is enough water. Add cumin, cayenne, and vegetable broth. Boil then simmer again for 1 more hour, or until soft. May need to add more water because you want the water to be about an inch above the beans after they're fully cooked.

Next, add chili seasoning and tomatoes. Simmer for atleast 30 minute. Serve with saltines & cheese or sour cream.

    I do something very similar to this, only I lightly sauté onions, garlic and rough-chopped celery until softened, then add the mostly-cooked beans and other ingredients. I will also use a couple of tablespoons of tomato paste to thicken it and enhance the flavour. Yumm!!! - 12/29/08

    I like not having meat in this recipe. We try to have 1 night a week meat free so I am using this. Only 4 stars because I do not like HOT chili. Very good! - 6/27/11

    Incredible!
    I've made this 3 times, and you can't even tell there is no meat in it. Its high in fiber, which I need more of. I added extra garlic and water b/c I like soupy chili. I loved it. - 8/16/08
